1 large head cauliflower, broken into florets
½ cup bread crumbs
½ cup shredded Parmesan cheese
1 egg
1 egg white
1 tablespoon minced onion

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 3 minutes. Drain and cool until easily handled.
  • Chop cauliflower finely until it is the size of rice grains.
  • Measure out 2 cups cauliflower "rice" into a large bowl. Add bread crumbs, Parmesan cheese, egg, egg white, parsley flakes, minced onion, salt, and black pepper. Form into 30 small logs. Arrange on the lined baking sheet; spray with cooking spray.
  • Bake in the preheated oven until lightly browned on the bottom, 8 to 9 minutes. Remove from oven, flip, and spray with cooking spray. Continue baking until lightly browned on the other side, 8 to 9 minutes more.

2 medium carrots (about 8 1/2 ounces), peeled, coarsely chopped
8 ounces cauliflower florets
5 tablespoons vegetable oil, divided
3/4 teaspoon kosher salt, divided
1/2 cup shredded Parmesan (about 1 ounce)
1/2 cup shredded sharp cheddar (about 1 ounce)
1 garlic clove, finely chopped
3 tablespoons chopped chives
1/4 teaspoon freshly ground black pepper
1 1/2 cups panko (Japanese breadcrumbs), divided
Nonstick vegetable cooking spray
1 cup all-purpose flour
3 large eggs
Ketchup, for serving

Steps:

  • Pulse carrots and cauliflower in a food processor (or grate carrot on smallest holes and cauliflower on largest holes of a box grater) until rice-like in texture. Transfer to a large heatproof bowl and toss with 1 Tbsp. oil and 1/4 tsp. salt. Cover with plastic wrap and microwave on high 3 minutes. Carefully remove plastic wrap and let cool slightly.

  • To Fry:
  • For extra-crispy tots, fill a large, deep-sided skillet with 1" vegetable oil and heat over medium to 350°F. Working in batches, fry tots, flipping halfway through, until golden brown and crispy, about 2 minutes per batch. Using a slotted spoon, transfer to a paper towel-lined platter or baking sheet. 1/4 cup minced white onion

1/2 large head caulflower, coarsely chopped
1/3 cup reduced-fat sharp cheddar
1/4 cup coarsely grated Parmesan cheese
2 tablespoons almond flour
1/2 teaspoon Vege-Sal (or a slightly smaller amount of salt)
1/2 teaspoon Spike Seasoning (Probably optional, but it does add flavor. You can substitute another all-purpose seasoning blend that tastes good with cauliflower)
Fresh-ground black pepper to taste
1 egg

Steps:

  • Preheat oven to 400°F/200°C. Spray a Mini Muffin Pan with non-stick spray. Cut away the leaves of the cauliflower, but use most of the inner core part. Coarsely chop the cauliflower, place in a micro-wave proof bowl, cover with cling wrap, and microwave 2 minutes on high. (Microwaves can vary so you may need to experiment with the time, but the cauliflower should be just slightly soft.) Quickly take off the cling-wrap and let the steam escape, and if you see any water in the bottom of the bowl, put the cauliflower into a colander and let the water drain off. Put the steel blade in the food processor, add the cauliflower, and pulse until the cauliflower is finely chopped but still slightly chunky. (Be careful not to over process so you don't end up with cauliflower puree!) If there is any water in the food processor bowl, drain the cauliflower again in the colander. Put finely chopped cauliflower into a bowl and add the reduced-fat sharp cheddar, coarsely grated Parmesan, almond flour, Vege-Sal or salt, Spike Seasoning (if using), and fresh-ground black pepper. Stir until ingredients are well-combined. Add the egg and stir until the ingredients are mostly coated with egg. (You might be tempted to add another egg, but don't. You'll be surprised how well this sticks together.) Use a One Tablespoon Cookie Scoop or a steel one-tablespoon measuring spoon to scoop out rounded spoonfuls of the mixture and place it in the mini muffin pan. Bake 15 minutes. 1/2 small yellow onion, diced
2 small head cauliflower or 4 stalks cauliflower
1 cup almond flour
2 large eggs, separated
1/2 cup buffalo wing hot sauce, plus 1 teaspoon
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups crispy rice cereal, blended in food processor
1/3 cup ranch dressing or 1/3 cup blue cheese dressing, for dipping

Steps:

  • Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and grease with cooking spray. Set aside.
  • If using whole cauliflower, remove the outer leaves and core. Cut into large chunks and add half to a food processor. Plus until finely chopped, and becomes almost like a paste. Transfer to a bowl, and continue chopping the rest of the cauliflower in the same way. If using just the stalks of cauliflower you've saved, chop up the stalks and proceed as directed.

1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon 2-percent milk

Cauliflower Tots:
1 tablespoon olive oil
1/2 small onion, finely chopped
2 small heads cauliflower
1 cup almond meal or almond flour
2 large eggs, separated
1/4 cup hot sauce, plus more for serving

2 cups crispy rice cereal

Steps:

  • For the blue cheese sauce: Whisk together the yogurt, mayonnaise, lemon juice, milk, Worcestershire and cayenne in a medium bowl until smooth. Gently stir in the blue cheese. Season with 1/2 teaspoon salt and pepper to taste. Refrigerate overnight or up to 3 days, covered, to let the flavors develop.
  • For the cauliflower tots: Position an oven rack at the top of the oven, and preheat to 450 degrees F. Set a cooling rack on a rimmed baking sheet.
  • Heat the oil in a large skillet over medium-high heat. Add the onion, and cook, stirring frequently, until browned and soft, about 5 minutes. Remove from the heat, and let cool in the skillet.
  • Remove and discard the outer leaves and core of the cauliflower. Separate the heads into large florets, and trim away most of the stems. Process half the florets in a food processor until very finely chopped, almost a paste. Transfer to a large bowl. Repeat with the remaining florets.
  • Lay out a large double layer of cheesecloth, and put the cauliflower paste in the middle. Gather up the sides into a bundle. Hold the bundle over the sink, and squeeze out as much of the liquid as you possibly can (there will be a fair amount). Put the remaining cauliflower back into the bowl (it should be fairly dry now).
  • Add the browned onion, almond meal, egg whites, hot sauce, 2 teaspoons salt and cayenne to the cauliflower, and work together with your hands until combined and the mixture holds together when squeezed.
  • Scoop out even tablespoonfuls of the cauliflower mixture. Roll each into a ball, shape into a squared-off tot shape and place on a baking sheet. (The tots can be covered loosely with plastic wrap and refrigerated up to overnight.)
  • Pulse the rice cereal in the food processor until finely ground, then transfer it to a small dish. Whisk the egg yolks with 1/4 cup water in a medium bowl. Line up the tots, egg wash, ground cereal and prepared baking sheet (with rack) on your work surface. Dip each tot in the egg wash, letting the excess liquid drip off, then roll in the cereal to fully coat and place on the baking sheet. (To avoid a mess, designate one hand for the dipping and retrieving in the egg and the other for rolling in the cereal.) Spray each tot all over with the cooking spray, turning as needed. (The unsprayed breaded tots can be frozen on a parchment-lined baking sheet until solid, about 2 hours, then transferred to a large freezer bag and frozen for up to 1 month.)
  • Bake the tots on the prepared baking sheet until golden brown outside and hot inside, 15 to 20 minutes. Let cool for a few minutes, then transfer to a serving platter.
