English cucumber, unpeeled
fresh herb (to garnish)
1/4 cup fresh crab
1 teaspoon fresh lime zest
1 teaspoon fresh lime juice
1 tablespoon green onion, sliced fine
1/4 cup celery, diced fine
1 tablespoon olive oil
kosher salt
cracked black pepper

Steps:

  • Mix all the ingredients together, taste for seasoning; set aside. This can be covered and refrigerated for 1 day.
  • Cut the unpeeled cucumber into 1-1/2" thick slices; with the cucumber slice still laying on it's side, make a diagonal cut, now you have two diagonal cut pieces of cucumber.
  • Use a melon baller to make a small round hole in the center of the cucumber where the seeds are to make a cup; do not cut completely through to the other side.
  • Lightly salt each cucumber cup; place on a paper towel to drain. They can be refrigerated at this point and finished later.

I saw this just recently in Cuisine at Home magazine. Two of my favorite flavors in the world, crab salad and cucumbers! Very tasty and very pretty, and a real company pleaser. I hid 3 away on a lovely dish while I charged up my camera battery, but someone found them. :( Be sure to use the English cucumbers because of their seedless, uniform shape and tender skin. These would also be very good with shrimp. I made them up about 1 hour ahead, tented them with toothpicks and plastic in the fridge, then served them on lettuce leaves. YUM!

1/4 cup mayonnaise
1/4 cup cream cheese, softened

3/4 cup of walnuts
1/4 cup of dried cranberries
2 tbsp of mayonnaise
1/8 tsp of wasabi paste
2 large cucumbers
the juice of 1 freshly squeezed lemon
4 oz of Wasabi infused Whitefish Caviar (preferably Little Pearl's all-natural American Caviar, as it is sustainably farmed and affordable.)
salt and pepper to taste

Steps:

  • Pulse walnuts, cranberries, mayonnaise, lemon juice and wasabi paste in food processor until the mixture is combined, but not yet smooth. (Similar to a crunchy peanut butter texture.) In a bowl, mix the crabmeat into the paste delicately with a fork. The crabmeat should remain airy, lightly coated and loosely packed. Cut cucumbers (peeled or unpeeled to your preference) into 1 inch lengths. Scoop out the middle with a melon baller or small sharp spoon, carefully leaving the bottom of the cucumber "cup" intact. Arrange cucumber cups and overfill with the crabmeat mixture, packing slightly into the bottom of the cup. As a final step, top your treat with a spoonful of the wasabi infused whitefish caviar. 1/4 red onion, diced very small
3 limes, juiced
1 lemon, juiced
1 mango, peeled, seeded, and diced very small

1 tablespoon freshly chopped cilantro leaves
1/8 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 pound fresh bay scallops
3 to 6 English cucumbers
1-ounce green caviar

Steps:

  • In a large mixing bowl, mix the jalapeno with the onion, lime juice, lemon juice, mango, papaya, cilantro and extra-virgin olive oil. 1 8-inch loaf brioche, ends trimmed off, cut into slices 1/4-inch thick
2 1 1/2-pound lobsters
1 1/2 teaspoons unsalted butter
1 shallot, peeled and minced
1 1/2 cups shiitake mushrooms, stemmed and cut into 1/4-inch cubes
Salt and freshly ground pepper to taste
2 1/2 tablespoons sevruga caviar

Steps:

  • Preheat oven to 375 degrees. Use a 3-inch round cookie cutter to cut out one circle of brioche from each slice. Flatten the rounds, and fit them into the cups of a miniature muffin tin. Bake until the bread is lightly browned, about 10 minutes. Let cool slightly, and remove from the tin.
  • Steam the lobsters until they turn bright red, about 10 minutes. When cool enough to handle, remove the tail and claw meat, and cut it into 1/2-inch chunks. Set aside. Melt the butter in a nonstick skillet over medium heat. Add the shallot, and cook until softened, about 30 seconds. Add the mushrooms, and cook until they soften, about 5 minutes. Season with salt and pepper.
  • Place half a teaspoon of the mushrooms into the bottom of each brioche cup. Top with 2 pieces of lobster, and garnish with 1/4 teaspoon of caviar. Serve immediately.
