CAVIAR SOUR CREAM DIP WITH POTATO CHIPS

Caviar Sour Cream Dip With Potato Chips image

This simple snack is a slightly fancier version of the time-honored practice of topping potato chips with sour cream and caviar. Here, the sour cream gets zipped up with scallions, chives and white pepper and the caviar - preferably bright orange beads of salmon roe - glow like jewels on top. One of the easiest hors d'oeuvres to put together, it's also one of the most festive.

Yield 4 to 6 servings

Number Of Ingredients 19

1/2 pound mesclun salad greens
Juice of 1 lemon
1/4 cup mustard shallot vinaigrette (recipe follows)
1/2 pound thinly sliced smoked salmon
2 3 to 4-ounce smoked trout fillets, skinned and boned
2 ounces tiny nonpareil capers, drained
1 small red onion, finely diced (about 1/3 cup)
4 tablespoons chili flavored olive oil
8 ounces sour cream
4 ounces salmon caviar
4 teaspoons chopped fresh chives
Country-style pumpernickel bread
1/4 cup champagne vinegar
3 tablespoons Dijon mustard
1 tablespoon clover honey
4 large, peeled shallots, thinly sliced, about 1/4 cup
1/4 teaspoon salt
1/4 teaspoon ground white pepper
3/4 cup extra virgin olive oil

Steps:

  • Toss the mesclun, or your choice of salad greens in a bowl with the juice of one lemon, plus the vinaigrette. Divide equally onto plates, mounding the greens in the center. Divide the salmon and trout fillets evenly among the plates, arranging them around the greens. Sprinkle the capers and onion around the fish. Drizzle one teaspoon of chili oil over the fish on each plate.
  • Artfully arrange a dollop of sour cream on each plate and top the sour cream with caviar.
  • Dust the plate with some chopped fresh chives and serve with country-style pumpernickel bread.
  • In the bowl of a food processor fitted with a sharp blade, process the vinegar, mustard, honey, shallots, salt and pepper until the shallots are finely chopped. With the processor running, add the oil in a small stream until all the oil has been incorporated and the dressing has achieved a silky, smooth texture. The dressing may be stored, covered, for up to one week in the refrigerator, but should be brought to room temperature before using. Yield: 1 cup;

Time 1h40m

Yield 6 servings

Number Of Ingredients 14

1 cup all-purpose flour, plus more for dusting
1 tablespoon poppy seeds
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into 1/2-inch pieces
1/4 cup plus 1 tablespoon half-and-half
About 1/4 teaspoon flaky sea salt, for topping
4 hard-boiled eggs
3 tablespoons mayonnaise
1 teaspoon fresh lemon juice
Kosher salt
1 tablespoon finely chopped fresh chives
1 ounce caviar
Fresh chives, cut into 1/2-inch pieces

Steps:

  • For the poppy seed crackers: Preheat the oven to 300 degrees F.
  • Pulse the flour, poppy seeds, onion powder and kosher salt together in a food processor to combine. Add the butter and pulse until the mixture resembles coarse meal. Add 1/4 cup of the half-and-half and process until the dough begins to clump together.
  • Lay out a large piece of parchment paper and dust it with flour. Turn the dough out onto the parchment, form it into a flat rectangle and then roll it out to approximately 10 by 17 inches. Freeze until firm, about 10 minutes.
  • Trim the dough to straighten the edges, then cut into 2-by-1-inch rectangles. Brush the tops with the remaining tablespoon of half-and-half and sprinkle with the flaky sea salt. Transfer the crackers on the parchment to a baking sheet and bake until crisp and light golden brown, about 30 minutes. Cool on a rack. (The crackers can be made up to 1 day ahead and stored in an airtight container at room temperature.)
  • For the egg mousse: Pulse the eggs, mayonnaise, lemon juice and some kosher salt in a food processor until very smooth. Add the chives and pulse to combine. Transfer to a pastry bag fitted with a medium tip and refrigerate until ready to use.
  • To assemble: Pipe the mousse onto the crackers. Top with a small dollop of caviar and some chives. Serve immediately.

BLACK SEA TOAST

Black Sea Toast image

Caviar has always symbolized the best in life; it is the single food most clearly identified with wealth, opulence and luxury. Yet for the connoisseur, caviar is more than a sybaritic, ostentatious display of riches. It is the ultimate edible, with all the subtleties, complexities and refinement of a great vintage wine or Champagne.

Categories     appetizer

Time 15m

Yield 4 servings

Number Of Ingredients 7

2 hard-cooked eggs
1/4 cup finely chopped onion
4 slices black Russian, dark pumpernickel, or Danish-style hard rye bread, about 4 to 5 inches in diameter
6 tablespoons (about 3 ounces) salmon caviar
4 tablespoons sour cream
1 tablespoon chopped chives
4 lemon wedges

Steps:

  • Shell the eggs and separate the whites from the yolks. Push the whites and the yolks separately through a sieve and set aside in individual bowls.
  • Rinse the chopped onion in a colander under cold water. (Rinsed onion is milder in flavor and will not discolor.) Drain, transfer to a kitchen towel and press to remove any excess water.
  • Trim the crust from the bread slices. Spoon some caviar around the edges of each slice, spreading it gently to create a 1/2-inch border of caviar. Inside this border, right next to the roe, spread the sieved egg white on the bread to form a ring that is 1/2 inch wide. Inside this ring, spread the sieved egg yolk to form another 1/2-inch ring. Inside that, spread the chopped onions to form a 1/2-inch ring. In the center of each slice, place 1 tablespoon of sour cream.
  • Garnish each slice with a few grains of caviar and the chives. Serve immediately with lemon wedges.

Tips:

  • Use high-quality ingredients to ensure the best flavor. Look for fresh, firm pumpernickel bread, good quality butter, and full-fat sour cream.
  • Don't oversaturate the bread with butter. A thin layer is all you need to prevent the bread from becoming soggy.
  • Use a sharp knife to thinly slice the pumpernickel bread. This will help to prevent the bread from tearing.
  • Top the bread with a generous amount of caviar. Don't be afraid to be generous, as the caviar is the star of the dish.
  • Add a dollop of sour cream to the top of each slice of bread. The sour cream will help to balance out the richness of the caviar.
