Time 10m

Yield 4 servings

Number Of Ingredients 9

1 small garlic clove, finely chopped
1/4 teaspoon kosher salt, plus a tiny pinch, more to taste
1 teaspoon Dijon mustard
2 teaspoons white wine vinegar, plus more to taste
3 tablespoons extra virgin olive oil
Freshly ground black pepper, to taste
1 medium celery root, trimmed and peeled
5 cups arugula or other salad greens, torn into bite-sized pieces
1/4 cup finely chopped, toasted pecans.

Steps:

  • To make the mustard vinaigrette, use a mortar and pestle or the flat side of a knife to smash the garlic and a tiny pinch of salt to make a paste. Whisk the paste in a small bowl with the mustard, vinegar and remaining salt. Whisking constantly, slowly drizzle in the oil until fully incorporated. Season with pepper.
  • To make the salad, fit a food processor with a large grating blade; grate the celery root. (You can also use a box grater, though beware your knuckles.) Transfer to a large bowl and add the arugula and pecans. Pour the vinaigrette over the salad and toss well. Season with more salt, vinegar and olive oil if needed before serving.

ARUGULA, CORN AND HERB SALAD

Arugula, Corn and Herb Salad image

Corn, lightly steamed and cut off the cob, is terrific in salads. It goes very nicely with arugula, the sweet corn providing a beautiful contrast to the pungent salad green. Although we don't think of corn as a nutritional powerhouse, it's a good source of several nutrients, including thiamin (vitamin B1), pantothenic acid (vitamin B5), folate, dietary fiber, vitamin C, phosphorus and manganese. A cup of corn supplies 19 percent of the recommended daily dose of folate, and about a quarter of the daily value for thiamin.

Tips:

  • Choose the right celery root: Look for celery roots that are firm and heavy for their size, with smooth, unblemished skin.
  • Peel the celery root carefully: Use a sharp knife to remove the tough outer skin of the celery root, being careful not to remove too much of the flesh.
  • Slice the celery root thinly: Use a sharp knife or a mandoline to slice the celery root into thin, even slices. This will help it cook evenly.
  • Roast the celery root until tender: Roast the celery root in a preheated oven until it is tender and slightly browned. This will bring out its natural sweetness and flavor.
  • Use a variety of greens: Arugula, spinach, and kale are all good choices for this salad. You can also use a mix of greens, such as baby lettuces, watercress, or radicchio.
  • Make a simple dressing: A simple vinaigrette dressing is a good choice for this salad. You can also use a store-bought dressing, if you prefer.
  • Add some protein: If you want to make this salad a more substantial meal, you can add some protein, such as grilled chicken, tofu, or roasted chickpeas.
  • Serve immediately: This salad is best served immediately, while the celery root is still warm and tender.

Conclusion:

Celery root arugula salad is a delicious and healthy salad that is perfect for a light lunch or dinner. It is packed with nutrients, including vitamin C, potassium, and fiber. The celery root is roasted until tender and slightly browned, which brings out its natural sweetness and flavor. The arugula adds a peppery bite, and the dressing adds a touch of acidity.
