1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

Steps:

Steps:

1 Tbsp. baking powder

1/4 tsp. ground nutmeg
1/4 tsp. salt
1 egg
1/2 cup applesauce
2 Tbsp. oil

Steps:

  • Heat oven to 400°F.
  • Pour milk over cereal in medium bowl; stir. Let stand 3 min. Meanwhile, combine flour, sugar, baking powder, spices and salt; set aside. Whisk egg, applesauce and oil in large bowl until blended.
  • Add cereal mixture to applesauce mixture; mix well. Add flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Spoon into 12 prepared muffin pan cups.

1/2 cup granulated sugar or 1/2 cup brown sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup milk
1 egg
1 teaspoon vanilla extract
1/3 cup melted butter or 1/3 cup vegetable oil
1 medium apples or 1 medium pear
1/2 cup raisins or 1/2 cup dried cranberries
2 cups cereal (e.g. bran or corn flakes, Fruit & Fibre, Honey Bunches of Oats, Rice Krispies, muesli or granola)

Steps:

  • Preheat oven to 375 degrees F.
  • Grease 12 muffin cups or line with paper cups.
  • In a large mixing bowl, use a fork to stir the flour with the sugar, baking powder, cinnamon, nutmeg and salt.
  • Make a well in the centre.
  • In a small bowl, whisk the milk with the egg and vanilla.
