This Spanish ham and chopped tomato dish served with crusty bread is ideal as part of a tapas evening or served up for a quick and easy lunch

4 firm vine-ripened tomatoes , halved
2 tbsp of your best olive oil , plus extra for brushing
12 thick slices of baguette
1 garlic clove , halved
6 slices serrano ham , each halved lengthways
12 cocktail sticks

Steps:

  • Sit a box grater on a plate and grate the tomatoes, leaving behind the skin. Drain the pulp in a small sieve, then mix the pulp with 2 tbsp of olive oil and season.
  • Brush the bread with oil and toast or griddle until golden. Rub one side with the cut side of the garlic. Just before serving, spoon some of the tomato onto each slice. Finish with a piece of ham, push in a cocktail stick and sprinkle over black pepper.

10 slices firm white sandwich bread
1 1/2 tablespoons unsalted butter, melted
1 oz Parmigiano-Reggiano
6 oz cream cheese, softened (3/4 cup)
1/3 cup pimiento-stuffed green Spanish olives (3 oz), rinsed, drained, and finely chopped
1/4 cup finely chopped scallion
1/4 cup finely chopped red bell pepper
1/4 teaspoon sweet paprika
2 teaspoons medium-dry Sherry
Special Equipment
a 1 1/2-inch round cookie cutter; a Microplane rasp

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Cut 40 rounds from bread slices with cutter, then brush 1 side of each round with butter and bake on a large baking sheet until pale golden, about 8 minutes. (Leave toasts on baking sheet.)
  • Preheat broiler.
  • Finely grate Parmigiano-Reggiano using rasp (you will have about 1 cup). Mash together cream cheese, olives, scallion, bell pepper, paprika, and Sherry until combined well, then top each toast with 1 teaspoon cream cheese mixture and sprinkle with Parmigiano-Reggiano. Broil canapés about 4 inches from heat until Parmigiano-Reggiano begins to turn golden, about 1 minute.

4 slices (1 ounce each) fully cooked ham
2 eggs
2 tablespoons milk
1/4 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup butter
1 cup spaghetti sauce, warmed

Steps:

  • On four slices of bread, layer with provolone cheese, ham, then cheese. Top with remaining bread. , In a shallow dish, beat eggs and milk. In another shallow dish, combine bread crumbs and Parmesan cheese. Dip sandwiches into egg mixture, then into crumb mixture. , In a large skillet over low heat, cook sandwiches in butter for 4 minutes on each side or until golden brown. Serve with spaghetti sauce for dipping.

16 slices Swiss cheese
8 thin sandwich pickle slices
4 slices deli ham
1/2 teaspoon paprika

Steps:

  • Cut baguette in half without slicing through completely. Arrange half of the cheese on bottom half. Top with pickles, ham and remaining cheese; sprinkle with paprika. Close sandwich; cut crosswise into four pieces., Transfer to an ungreased baking sheet. Bake at 350° for 12-15 minutes or until cheese is melted.

2 oranges
1/4 cup imported green olives, such as Provencal, pitted
1/2 small shallot, sliced into very thin rounds
1 tablespoon olive oil
2 tablespoons fresh orange juice
1 teaspoon sherry vinegar
1/4 teaspoon salt
Pinch of freshly ground black pepper
1 round loaf of country bread (about 1 pound and 10 inches in diameter)
8 very thin slices serrano ham (about 2 ounces)

Steps:

  • Remove zest from a quarter of 1 orange, cut zest into very thin strips, and set aside.
  • Cut away peel and pith of oranges and separate segments, removing white membranes. Cut segments into 1/2-inch pieces, and place in a small bowl. Coarsely chop olives, and add to oranges. Add shallot, olive oil, orange juice, vinegar, salt, and pepper; toss to combine.
  • Cut bread into 4 wedges. Split 1 wedge crosswise with your hands (set remaining bread aside for another use), separating the top and bottom crusts. Tear each half into 4 chunks, and arrange on a serving plate. Place a slice of ham, folding or rolling it if necessary, on each piece of bread, and spoon about 1 tablespoon of the orange mixture on top. Sprinkle with zest, and serve.

1 1/4 ounces stuffed green olives, chopped
3 ounces ham, finely chopped
1/4 cup cheddar cheese, grated
3 sheets puff pastry, thawed
1 egg yolk, lightly beaten

Steps:

  • Preheat oven to 425 F and lightly grease two baking trays.
  • Combine olives, ham and cheddar in a bowl. Cut about five 4-inch rounds from each pastry sheet. Spoon a tablespoon of the filling into the center of each round, fold the pastry over and crimp the edges to seal.
  • Place the pastries on the trays about 2 cm apart. Brush with the egg yolk and bake in the center or top half of oven for 15 minutes, or until well browned and puffed. Swap the trays around and cook another 10 minutes, covering loosely with foil if the empanadas start to brown too much. Serve hot.

  • Preheat a skillet over medium-high heat.
  • Spread one side of each slice of bread with 1 teaspoon butter. Place one slice, butter-side down in the hot skillet. Top with Swiss cheese and ham. Spread the unbuttered side of the second slice of bread with mayonnaise and mustard; place it, butter-side up on top of the sandwich.
