Time 1h

Yield 6

Number Of Ingredients 14

1 (16 ounce) package elbow macaroni
¼ cup butter
¼ cup all-purpose flour
¼ teaspoon dried thyme
¼ teaspoon cayenne pepper
⅛ teaspoon white pepper
3 cups milk
1 pinch ground nutmeg
¼ teaspoon Worcestershire sauce
1 teaspoon salt
3 cups shredded sharp Cheddar cheese, divided
1 teaspoon Dijon mustard
½ cup panko bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta is cooked through but still slightly firm, about 8 minutes. Drain well.
  • Melt 1/4 cup butter in a large saucepan over medium heat. When the butter starts to foam and bubble, stir in the flour; cook on medium heat until flour just begins to turn pale yellow, 3 to 4 minutes. Add thyme, cayenne pepper, and white pepper; cook and stir another minute, then whisk in 1 cup of milk until smooth. Pour in remaining milk and whisk again. Bring the sauce just to a simmer.
  • Stir in nutmeg, Worcestershire sauce, and salt; simmer on medium-low heat until thickened, about 8 minutes, whisking often. Turn heat off, then add 2 1/4 cups of Cheddar cheese; stir until melted and combined. Add Dijon mustard.
  • Transfer the macaroni into a casserole dish, then pour in the cheese sauce; stir to thoroughly combine sauce with pasta. Mix panko bread crumbs and 1 tablespoon melted butter in a small bowl, and sprinkle crumbs on top of macaroni and cheese. Sprinkle remaining 3/4 cup of Cheddar cheese on top.
  • Bake in the preheated oven until bread crumbs and Cheddar cheese topping are golden brown, about 20 minutes.

Yield 6-8 serving(s)

Number Of Ingredients 15

1/2 lb butter, plus extra for the baking dish
1 1/4 lbs elbow macaroni
2 cups heavy cream
2 cups whole milk
1 small onion, diced small
4 garlic cloves, minced
1 cup flour
5 cups shredded sharp cheddar cheese
8 slices American cheese, broken into small pieces
2 cups freshly grated parmesan cheese
3 tablespoons green chili sauce
1/4 teaspoon ground cumin
kosher salt
fresh ground pepper
1/2 cup seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 9 by 13 by 4-inch baking dish.

I love the mac-n-cheese that a local place in VA serves, called Country Kitchen. It's been around for years and I remember eating this there when I was a kid! Absolutely delicious and easy to make; great recipe if you aren't hung up on calories, lol.

Tips:

  • Use a good quality cheese. This will make all the difference in the flavor of your mac and cheese. Look for a cheese that is sharp and flavorful, such as cheddar, Gruyère, or Parmesan.
  • Cook the macaroni al dente. This means that it should be cooked until it is tender but still has a slight bite to it. Overcooked macaroni will be mushy and unpleasant.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken the cheese sauce. This will help to prevent the sauce from becoming too runny.
  • Add milk or cream gradually. When you are adding milk or cream to the cheese sauce, do it gradually and whisk constantly. This will help to prevent the sauce from curdling.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste. You can also add a pinch of cayenne pepper for a little bit of heat.
  • Top with breadcrumbs or grated Parmesan cheese. This will give your mac and cheese a nice golden brown crust.

Conclusion:

Mac and cheese is a classic comfort food that is loved by people of all ages. It is a versatile dish that can be made with a variety of different ingredients and flavors. Whether you like your mac and cheese simple or loaded with toppings, there is a recipe out there for everyone. So next time you are looking for a quick and easy meal, give one of these mac and cheese recipes a try. You won't be disappointed!
