Categories     side-dish

Time 35m

Yield 12-14 biscuits

Number Of Ingredients 12

Cooking spray
1 3/4 cups all-purpose flour
1 tablespoon plus 2 teaspoons baking powder
2 1/2 teaspoons sugar
1/4 teaspoon salt
3 tablespoons vegetable shortening, at room temperature
4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
3/4 cup whole milk
3 tablespoons unsalted butter
1 clove garlic, smashed
1 teaspoon chopped fresh parsley

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
  • Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
  • Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
  • Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

CHEDDAR PECAN BISCUITS

Cheddar Pecan Biscuits image

Discovered while I was making cheddar biscuits and said to myself, "I wonder what these would taste like with pecans." You could probably halve the ingredients with good results. I didn't have "thick" sour milk. Instead, I used a couple dollops plain yogurt and milk to the 2 cup mark. Serve with butter.

Time 24m

Yield 32 biscuits, 10 serving(s)

Number Of Ingredients 8

1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 cup coconut oil
3 cups extra-sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 450 degrees.
  • Stir dry ingredients (first 4) together.
  • Work in coconut oil until evenly distributed.
  • Toss in cheese and pecans.
  • Stir in sour milk.
  • Drop onto stoneware baking pan using large scoop. Bake for 12-14 minutes.

Tips:

  • Use cold butter. Cold butter creates pockets of steam in the biscuits as they bake, which results in a flaky texture. If you use softened butter, the biscuits will be more dense.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough. Mix the ingredients just until they come together.
  • Chill the dough before baking. Chilling the dough helps the butter to solidify, which results in a more flaky biscuit. You can chill the dough for 30 minutes or up to overnight.
  • Bake the biscuits in a hot oven. A hot oven will help the biscuits to rise quickly and evenly.
  • Add mix-ins to your liking. Feel free to add your favorite mix-ins to these biscuits, such as bacon, cheese, chives, or jalapenos.

Conclusion:

Cheddar biscuits with pecans are a delicious and easy-to-make treat. They are perfect for breakfast, lunch, or dinner. They can also be served as an appetizer or snack. These biscuits are sure to be a hit with everyone who tries them.
