People in my part of Tennessee love potato dishes! This one tickles my fancy so much I couldn't help sharing it. I'm a widow with five grown children and eight grandchildren. I make these potatoes when they come to visit for family suppers and holidays. Most often, I serve them alongside meat and vegetables-but, with the cheese, they could be a main dish all by themselves.

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 9

1/4 cup butter
1/4 cup flour
2 cups milk
1/2 teaspoon salt
4 ounces cheddar cheese, shredded
1/2 cup freshly grated parmesan cheese
5 medium potatoes, cooked peeled, and sliced
1/4 cup fresh breadcrumb
1 tablespoon melted butter

Steps:

  • In a saucepan, melt the 1/4 cup butter over low heat.
  • Add the flour and whisk until smooth.
  • Add the milk slowly, stirring until the mixture thickens.
  • Remove from heat.
  • Add the salt and the cheeses, stirring until they melt.
  • Fold in the potatoes, stirring gently until coated.
  • Place the mixture in a buttered 2-quart baking dish.
  • Toss the melted tbsp of butter with the breadcrumbs and sprinkle evenly over the top.
  • Bake, uncovered, at 350 degrees F for 30-35 minutes, until lightly browned and bubbly.

Tips:

  • Select the Right Potatoes: Use a firm, waxy potato variety like Yukon Gold or Red Potatoes. These hold their shape well and won't become too mushy when baked.
  • Parboil the Potatoes: Parboiling helps to cook the potatoes partially and reduce the overall baking time. It also creates a crispy outer layer.
  • Use Freshly Grated Cheese: Freshly grated cheese melts better and provides a more intense flavor compared to pre-shredded cheese.
  • Season Generously: Don't be afraid to season the potatoes liberally. Garlic powder, onion powder, paprika, and black pepper are all great options.
  • Don't Overcrowd the Pan: Make sure to spread the potatoes in a single layer on the baking sheet. Overcrowding will prevent them from cooking evenly.
  • Roast Until Golden Brown: Roast the potatoes until they are golden brown and crispy on the outside and tender on the inside. This usually takes about 20-25 minutes.

Conclusion:

Cheddar Parmesan Potatoes are a delicious and versatile side dish that can be enjoyed with a variety of entrees. They are easy to make and can be tailored to your own taste preferences.
