½ cup all-purpose flour
½ cup brown sugar
½ cup shredded Cheddar cheese
¼ cup butter
6 cups peeled and sliced pears
1 tablespoon fresh lemon juice
½ cup brown sugar
3 tablespoons cornstarch
¾ teaspoon ground cinnamon
unbaked pie crust

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine the flour, 1/2 cup brown sugar, and Cheddar cheese. Cut in the butter until the mixture resembles coarse crumbs.

4 large ripe pears, peeled and thinly sliced
1/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1 frozen pie shell (9 inches)
TOPPING:
1/2 cup shredded cheddar cheese
1/2 cup all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the pears, sugar, cornstarch and salt; toss gently to coat. Pour into pie shell. , For topping, combine the cheese, flour, sugar and salt; stir in butter until crumbly. Sprinkle over filling. , Bake at 425° for 25-35 minutes or until crust is golden brown and cheese is melted. Cool on a wire rack for 15-20. Serve warm. Store in the refrigerator.

I had a bunch of pears that needed used up and I make this recipe with apples so I substituted pears for the apples.

5 large pears
2 tsp lemon juice, fresh
1/2 c sugar
4 tsp corn starch
1/8 tsp salt
1 frozen deep dish pie shell (or homemade)
TOPPING
3/4 c sharp cheddar cheese
1/2 c all purpose flour
1/2 c sugar
1/4 tsp salt
1/3 c butter, melted
FINALLY
Hand Full cheddar cheese

Steps:

  • 1. Defrost pie shell. Preheat oven to 425. Peel, core and slice pears. Toss with lemon juice. Add cornstarch, sugar and salt to pears and toss until coated. Place in pie shell.
  • 2. In small bowl add cheese, flour, sugar and salt. Stir together. Add melted and cooled butter and stir with a fork. Add to top of pears in an even layer.
  • 3. Bake for 25-35 minutes until golden brown. I place pie on cookie sheet (in case it bubbles over)
  • 4. Cool on wire rack. I prefer it cooled completely, but my husband likes it warm with vanilla ice cream.
  • 5. After you place pie on rack, sprinkle with handful of cheese. It will melt with residual heat.

Tips:

  • Use ripe pears for the best flavor. Bosc and Bartlett pears are good choices.
  • Peel and core the pears before slicing them.
  • Use a sharp knife to slice the pears so they are uniform in thickness.
  • Don't overcrowd the pie crust with pears. You want them to be able to cook evenly.
  • Bake the pie at a high temperature for the first 15 minutes, then reduce the temperature to finish baking.
  • Let the pie cool for at least 1 hour before serving. This will allow the filling to set.
