CHICKEN, BROCCOLI, AND CHEDDAR CASSEROLE

Chicken, Broccoli, and Cheddar Casserole image

Super comfort food, but kinda healthy because it has broccoli in it, right? My grandmother passed this chicken and Cheddar recipe down and it is a family favorite. After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

CHEDDAR RICE

Cheddar Rice image

Absolutely a kid pleaser, uses up that leftover rice and just maybe a good alternative to mac n cheese. Adding herbs is, also, an option...oohhhh, maybe a little sweet pepper, or how about...

Categories     White Rice

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

3 cups cooked rice
1/2 cup sour cream
1 teaspoon salt
1 dash ground red pepper (more if desired)
1 cup grated cheddar cheese, divided

Steps:

  • Combine rice, sour cream, salt, pepper, and 1/2 the cheese. Spoon into a buttered, shallow 1-quart baking dish. Top with remaining cheese. Bake at 350 degrees for about 20 minutes.

Tips:

  • Cook the rice perfectly: Use a ratio of 1 cup of rice to 2 cups of water or broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and all the liquid has been absorbed.
  • Use flavorful cheese: A sharp cheddar cheese will give the casserole a bold flavor, while a mild cheddar will produce a more subtle taste. You can also use a combination of cheeses, such as cheddar and Parmesan or cheddar and mozzarella.
  • Add vegetables for a boost of nutrition: Diced carrots, celery, onions, and bell peppers are all great additions to cheddar rice casserole. They add flavor, texture, and nutrients to the dish.
  • Don't overcook the casserole: The casserole is done when the cheese is melted and bubbly and the rice is tender. Overcooking can make the rice mushy and the cheese tough.
  • Serve immediately: Cheddar rice casserole is best served hot out of the oven. You can garnish it with chopped parsley or green onions for extra flavor.

Conclusion:

Cheddar rice casserole is a versatile and easy-to-make dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up leftover rice and cheese, and it's also a budget-friendly meal. With its creamy, cheesy flavor and comforting texture, cheddar rice casserole is sure to be a hit with the whole family.
