Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 14

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
10 ounces sliced mushrooms
1 1/2 lbs ground beef
2/3 cup fresh breadcrumb
1/2 cup minced parsley
1/4 cup ketchup
1 egg, beaten to blend
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon dried sage, crumbled
1 1/2 cups grated cheddar cheese

Steps:

  • Heat oil in skillet over medium heat.
  • Add onion and sauté until translucent, about 4 minutes.
  • Add garlic and mushrooms.
  • Cook until mushrooms are golden-brown and liquid evaporates, about 8-9 minutes.

  • Mix beef and everything else but cheese.
  • Turn out onto large square of plastic wrap.

HEAVENLY MEATLOAF WITH BLUE CHEESE, MUSHROOMS, AND SPINACH

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

Tips:

  • Choose the right ground meat. A combination of ground beef and ground pork is a classic choice for meatloaf, but you can also use all beef, all pork, or even ground turkey or chicken. If you're using a leaner meat, like ground turkey or chicken, add some extra fat, such as butter or olive oil, to keep the meatloaf moist.
  • Don't overmix the meatloaf. Overmixing will make the meatloaf tough. Just mix the ingredients until they're evenly combined.
  • Use fresh bread crumbs. Fresh bread crumbs will help to keep the meatloaf moist and flavorful. If you don't have fresh bread crumbs, you can make your own by toasting slices of bread and then crumbling them in a food processor.
  • Season the meatloaf generously. Meatloaf is a blank canvas for flavor, so don't be afraid to season it generously. Common seasonings include salt, pepper, garlic powder, onion powder, and paprika.
  • Don't forget the cheese and mushrooms. The cheese and mushrooms are what make this meatloaf special. Use a good quality cheese that melts well, such as cheddar or mozzarella. And use fresh, flavorful mushrooms, such as cremini or shiitake.
  • Cook the meatloaf to the right temperature. Meatloaf is done when it reaches an internal temperature of 160 degrees Fahrenheit. If you cook it too long, it will become dry and tough.

Conclusion:

Cheese and mushroom stuffed meatloaf is a delicious and hearty dish that is perfect for a family meal. It's easy to make and can be tailored to your own preferences. Whether you like your meatloaf classic or cheesy and mushroomy, this recipe is sure to please everyone at the table.
