This cheese rotel dip but better is the next best thing for all your game days! It is easy to make, tastes a whole lot better than the more traditional one and can be made in 20 minutes.

16 oz Velveeta (diced in cubes)
10 oz Rotel can
1 lbs ground beef
3 oz cream cheese ((optional))
1/2 medium onions (diced (optional))
1/2 tsp paprika ((optional))
1/4 tsp cumin ((optional))
1/4 cup green onions ((optional))

Steps:

  • Start by sautéing the onion on a skillet with 1 tbsp water until they become translucent. Add in the ground beef, the paprika and cumin and brown over medium high heat until completely cooked and you there is no more pink left. Drain the fat to the meet is dry.
  • Turn down the heat to medium and add in the Rotel tomatoes , processed cheese, and the cream cheese. Stir until completely melted. Sprinkle with green onions and serve with tortilla chips or flat bread immediately.

1 (10 ounce) can diced rotel (tomatoes and green chilies)
2 lbs Velveeta cheese, cubed
tortilla chips

Steps:

  • Put Rotel (and its juice) and cubed Velveeta in the slow cooker.
  • Cover and cook on low for about 2 hours.
  • Stirring occasionally.
  • Serve with the Tortilla chips.

This is the best and easiest dip EVER!! I take this dip to parties all the time. EASY EASY EASY...and it follows my simple rule of recipes...."Does it have cream cheese in it?" Yes....okay...this has to be a good recipe!! Haha! :)

2 (8 ounce) packages cream cheese
1 (10 ounce) can Rotel Tomatoes
1 (24 ounce) bag tortilla chips

Steps:

  • Cut blocks of cream cheese into cubes and put in small crock pot.
  • Pour can of rotel (do not drain) over cream cheese.
  • Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
  • This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
  • Serve with Tortilla Chips! Enjoy! :).
