1/2 lb uncooked elbow macaroni
4 tablespoons butter
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup milk
2 cups shredded sharp Cheddar cheese (8 oz)
1/2 cup Progresso™ plain panko crispy bread crumbs
1 tablespoon finely chopped fresh Italian (flat-leaf) parsley

Steps:

  • Heat oven to 425°F. Place foil muffin liner in each of 12 regular-size muffin cups. Spray liners with cooking spray. Cook macaroni as directed on package; drain, and set aside.
  • Meanwhile, in 4-quart saucepan, melt 2 tablespoons of the butter over medium heat. Add flour, salt and pepper; cook and beat with whisk 1 to 2 minutes or until thickened. Slowly beat in milk. Heat just to boiling, stirring frequently. Remove from heat. Stir in cheese. Stir in macaroni. Divide mixture evenly among cups.
  • In medium microwavable bowl, microwave remaining 2 tablespoons butter uncovered on High 60 to 90 seconds or until melted. Stir in bread crumbs and parsley. Spoon on top of mixture in cups. Gently press.
  • Bake 18 to 22 minutes or until bread crumb mixture is golden brown. Let stand 5 minutes before serving.

4 heirloom tomatoes, halved and seeded
Olive oil, to drizzle
Kosher salt and freshly ground black pepper
Fresh thyme leaves, to season
4 English muffins, split
8 slices Swiss cheese, thinly sliced
8 slices Black Forest ham, thinly sliced
2 to 3 tablespoons butter, to coat
8 large eggs
1 tablespoon finely diced fresh chives

Steps:

  • Preheat the oven to 375 degrees F. Put the tomato halves on a baking sheet, cut-side up, drizzle with oil and season with salt, pepper, and thyme. Roast the tomatoes until soft, about 30 minutes. Remove the tomatoes to a plate. Wipe the baking sheet with paper towels and place the English muffin halves on the baking sheet and toast in the oven until lightly golden brown, about 5 minutes. Top each with a slice of the cheese, return to the oven and toast until the cheese is melted, about 2 minutes. Remove and let sit while you make the eggs.
  • Heat a nonstick pan over medium heat. Add the ham slices and cook until slightly crisp and warmed through. Remove the ham to a plate. Add a few tablespoons of butter to the pan, whisk 8 large eggs in a bowl, season with salt and pepper and cook over low heat until soft curds form and stir in the chives.
  • Top each muffin half with a slice of ham. Top the bottom half with some of the eggs and 2 tomato halves. Combine halves to make 4 sandwiches. Serve immediately.

Okay, so that's a long name! This is my variation of a "cheesy cinnamon toast" recipe I found in the book, "So What CAN I Eat?!" I hate cottage cheese. The texture is just ... nasty. For some reason, I still keep trying to find a way to make it somewhat palatable! This may have worked. I used a blender because I keep a kosher kitchen and don't have a dairy food processor, so I had to add some water. If you use a food processor, I guess you can leave out the water.

1 tablespoon jam
2 teaspoons water
1 g Splenda sugar substitute (packet) (optional)

  • Combine the cottage cheese, jam and water in a food processor, and blend until smooth. (You may have to stop the blender and shake the jar so that the mixture ends up over the blades again. Mine never did get TOTALLY smooth.).
