BROWN BUTTER SPAGHETTI WITH GREEK (MIZITHRA) CHEESE

Brown Butter Spaghetti With Greek (Mizithra) Cheese image

I remember this as being the de facto side dish, with a salad, to any lamb dish I had growing up, in my Greek grandparents' house. I make it quite often, and have never had a recipe, so beware, the measurements may be a bit off. I sometimes don't add the garlic and oregano, but they do add a nice zing to the dish.

Provided by Lizzie-Babette

Categories     Spaghetti

Time 25m

Yield 4 serving(s)

Number Of Ingredients 6

1/2 cup grated mizithra cheese
8 ounces spaghetti
4 tablespoons butter (do not substitute margarine, or to taste)
2 teaspoons minced garlic (optional)
2 teaspoons oregano (optional)
fresh ground black pepper, to taste

Steps:

  • Cook spaghetti until al dente.
  • Drain spaghetti and leave in colander or drainer.
  • Put butter (and garlic and oregano, if using) into hot pan and put it back on the burner, making sure heat is medium to medium-high.
  • Stirring constantly, cook butter until it's a nice, light to medium brown.
  • Remove pan from heat.
  • Quickly return spaghetti to pan, turning to coat the strands with the butter; the spaghetti should glisten with the light coating of butter.
  • At this point, you can add a bit more butter if you like.
  • Once butter coats spaghetti, add cheese and mix well, so that bits of the mizithra are sticking to the spaghetti evenly.
  • Grind a bit of pepper over the dish and mix again.
  • Serve with extra mizithra and pepper.

KETO SPAGHETTI SQUASH WITH BACON AND BLUE CHEESE

Keto Spaghetti Squash with Bacon and Blue Cheese image

Turn plain old spaghetti squash into a keto meal with the addition of bacon, mushrooms, spinach, and blue cheese. I like to double the blue cheese, especially when using a milder variety. Carbs in spaghetti squash can add up quickly, so use a small squash that's approximately 2 pounds.

Provided by France C

Categories     Meat and Poultry Recipes     Pork

Time 1h15m

Yield 2

Number Of Ingredients 9

1 small spaghetti squash
1 tablespoon olive oil
salt and ground black pepper to taste
4 slices bacon, cut into 1/2-inch pieces
1 (4 ounce) package mushrooms, sliced
1 clove garlic, minced
2 cups baby spinach
¼ cup sour cream
2 tablespoons crumbled blue cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Cut stem off the end of spaghetti squash using a sharp knife. Cut the squash in half lengthwise and scrape out the seeds. Brush the inside with olive oil and sprinkle with salt and pepper.
  • Bake in the preheated oven until soft, about 45 minutes. Scrape cooked flesh out into a bowl and set aside. Return spaghetti squash shells to the baking sheet.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 6 minutes. Drain bacon slices on paper towels.
  • Add mushrooms and garlic to the skillet and cook for 4 to 5 minutes. Add in the cooked bacon and spinach. Stir until spinach is wilted, 2 to 3 minutes. Add mushroom mixture to the bowl of squash. Mix in sour cream, salt, and pepper. Stir until filling is evenly combined.

SPAGHETTI WITH TOMATOES GARLIC AND FETA CHEESE

Spaghetti with Tomatoes Garlic and Feta Cheese image

A great summer pasta dish. The Feta cheese is a wonderful match for the tomatoes, and the heat of the spaghetti and garlic oil makes the cheese soft. This is a recipe you can change to your own likes. Try using Mozzarella instead of Feta, or using fresh basil, or fresh herbs instead of parsley.

COWBOY SPAGHETTI WITH CHEESE SAUCE - RACHAEL RAY

Cowboy Spaghetti With Cheese Sauce - Rachael Ray image

I saw Rachael Ray make this on her show and I thought it looked delicious. I made it tonight and it was OUTSTANDING. The jalapenos definitely add a lot of spice to the cheese sauce, so if you have little ones you may want to remove some of the sauce and keep it separate for them before you add the peppers. The only change I made is that I added 2 cans of drained pinto beans. Rachael says this serves 4, but I think it serves 8 easily.

Categories     Stew

Time 45m

Yield 8 serving(s)

Number Of Ingredients 22

1 lb spaghetti
salt
1 tablespoon extra virgin olive oil
3 slices bacon, chopped
1 lb lean ground beef
1 medium onion, chopped
3 -4 garlic cloves, chopped
fresh ground black pepper
2 teaspoons hot sauce
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1/2 tablespoon ground cumin
5 ounces ale beer, about 1/2 bottle
14 ounces crushed fire-roasted tomatoes
8 ounces tomato sauce
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1 cup milk
2 1/2 cups shredded cheddar cheese
1/4 cup pickled jalapeno pepper, finely chopped
4 scallions, chopped

Steps:

  • Bring a pot of water to a boil. Add a generous amount of salt, then the pasta and cook spaghetti until al dente according to package directions.
  • Heat a deep skillet over medium-high heat. Add olive oil and bacon. Brown and crisp bacon, about 5 minutes, then remove with a slotted spoon to a paper towel-lined plate and reserve. Drain off a little excess fat if necessary but leave just enough to coat the bottom of the skillet. Add the sirloin and crumble it with a wooden spoon as it browns, 3-4 minutes. Add the onions and garlic, and season with salt, pepper, hot sauce, Worcestershire, chili powder and cumin.
  • Cook for another 5-6 minutes. Add the beer, cook for 1 minute more then add tomatoes and tomato sauce. Bring up to a bubble and continue to cook for 5 minutes.
  • While the meat sauce is cooking, make the cheese sauce: Heat a small sauce pot over medium heat and add butter. When the butter melts, stir in the flour and cook for 1 minute. Whisk in the chicken stock and then the milk. Thicken for 2 minutes then stir in the cheese and melt, for another 2 minutes. Stir in the jalapenos and scallions. Season with a little salt and pepper.
  • Drain spaghetti, add to the meat sauce and combine.
  • Pour into a large serving bowl and pour the cheddar cheese sauce over the top.

  • Remove from the oven and let cool for 10 minutes. Run a spatula around the edges and underneath the pie to loosen. Place a large plate over the skillet and invert the pie onto the plate. Place another plate onto the pie and invert again. Let the pie set for an additional 10 minutes.
  • Slice the pie into 6 to 8 pieces and garnish with the remaining Parmesan and basil leaves before serving.

SPAGHETTI WITH ROMANO BEANS, BLACK PEPPER AND GOAT CHEESE

Spaghetti With Romano Beans, Black Pepper and Goat Cheese image

This pasta is inspired by a classic Roman dish made with just pasta, Pecorino and lots of pepper. I decided to try a creamier version using goat cheese and added the flat romano beans, still abundant in local farmers' markets.

Time 30m

Yield Serves four

Number Of Ingredients 6

Salt to taste
3/4 pound romano beans
3/4 pound spaghetti
4 ounces goat cheese
1 to 2 teaspoons freshly ground black pepper (to taste)
2 tablespoons olive oil

Steps:

  • Bring a large pot of water to a boil and salt generously. Fill a bowl with ice water. Add the beans to the pot, and cook five minutes, until tender. Transfer to the ice water, then drain. Cut away the stem ends, and cut the beans into 2-inch lengths.
  • Place the goat cheese in a bowl. Bring the water back to a boil, and add the spaghetti. Cook al dente, following the timing instructions on the package (usually 10 minutes).
  • Just before the pasta is finished, add 1/2 cup of the cooking water to the goat cheese and stir together. Remove another 1/2 cup of the pasta cooking water from the pot and set aside.
  • When the pasta is ready, add the beans back into the pot with the pasta. Heat through, then drain. Return the pasta and beans to the hot pot, along with the diluted goat cheese, the pepper and the olive oil. Toss together until the pasta is coated with the cheese. If desired, thin out with some of the pasta water you set aside. Serve hot.

Tips:

  • Choose the right pasta: Spaghetti is the classic choice for this dish, but you can also use other long pasta shapes like linguine, fettuccine, or tagliatelle.
  • Cook the pasta al dente: This means cooking it until it is tender but still has a slight bite to it. Drain the pasta and reserve 1 cup of the cooking water.
  • Use a good quality cheese: The cheese is the star of this dish, so it's important to use a good quality Parmesan or Pecorino Romano. Freshly grated cheese is always best.
  • Don't overcook the sauce: The sauce should be cooked until it is hot and bubbly, but not boiling. Overcooking the sauce will make it tough and rubbery.
  • Serve immediately: This dish is best served immediately, while the pasta is still hot and the cheese is melted and gooey.

Conclusion:

Cheese spaghetti is a simple but delicious dish that is perfect for a quick and easy meal. It is also a great way to use up leftover pasta and cheese. With a few simple ingredients and a little bit of time, you can make a cheesy spaghetti dish that the whole family will love.
