Time 1h

Yield 48 squares

Number Of Ingredients 9

2 eggs
6 tablespoons whole-grain wheat flour
1 1/2 cups cheddar cheese, shredded
10 ounces frozen spinach, thawed drained
2 cups cottage cheese
1 pinch ground nutmeg
1 dash black pepper, fresh ground
1 dash cayenne pepper
3 tablespoons wheat germ

Steps:

  • In a large bowl, beat eggs (or egg substitute) with flour until smooth.
  • Squeeze spinach to dry then add to egg mixture along with cottage cheese, cheddar cheese, pepper, cayenne, and nutmeg.
  • Mix well.
  • Pour into 13 x 9 x 2-inch pan that has been sprayed with non-stick cooking spray.
  • Sprinkle with wheat germ and bake in preheated 350-degree oven for about 45 minutes.
  • Let stand 10 minutes then cut into 1-1/2 inch squares.

Tips:

  • Prep the Ingredients: Before you start cooking, make sure all the ingredients are prepped, measured, and ready to go. This will help you stay organized and prevent any scrambling during the cooking process.
  • Use Fresh Spinach: Fresh spinach is the best choice for these appetizers, as wilted or frozen spinach will not provide the same vibrant flavor and texture.
  • Don't Overcook the Spinach: Spinach cooks quickly, so be careful not to overcook it, as this will make it limp and mushy. Aim for a bright green color and a slightly wilted texture.
  • Use a Good Quality Cream Cheese: The cream cheese is a key ingredient in these appetizers, so be sure to use a high-quality brand that is smooth and creamy. Avoid using low-fat or fat-free cream cheese, as it will not provide the same rich flavor and texture.
  • Season to Taste: Be sure to taste the spinach and cheese mixture before baking to adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder to suit your taste preferences.
  • Serve Warm: These appetizers are best served warm, so they are fresh out of the oven. You can reheat them in the oven or microwave if needed, but be careful not to overcook them.

Conclusion:

Cheese spinach appetizers are a delicious and versatile snack or appetizer that can be enjoyed by people of all ages. They are easy to make and can be customized to suit your taste preferences. With their combination of creamy cheese, fresh spinach, and savory seasonings, these appetizers are sure to be a hit at your next party or gathering.
