I couldn't help but post this recipe. It really does taste like a cheeseburger! My mom made this once for my brothers and I when we were little. I remember loving the flavor of it. Just the other day out of nowhere I was craving this dish. I did an internet search and found it at backofthebox.com, which is basically a recipe site that has recipes found on the back of boxes. This is a Kraft recipe and the blending of these basic ingredients makes the most delicious macaroni and cheese. I like it because it's hearty and includes beef. The velveeta makes it incredibly creamy and the ketchup adds a hint of sweetness. I prefer to use the big macaroni but any size will do. Mmmmmmm so good! I like to serve steamed veggies on the side.

  • I usually brown my hamburger in the microwave. I put the meat in a microwave safe bowl along with the garlic (and onion if you like) and then put in microwave for three minutes on high. After three minutes take it out and stir it up, breaking the meat into pieces. Then microwave in 30 second bursts, taking it out and stirring until all the meat is brown. Then when you add the mac and cheese you can just put it in this bowl and serve. This saves how many bowls you have to dirty in the kitchen to make this dinner.

8 ounces elbow macaroni
1 green pepper, chopped
1 small onion, chopped
1 (10 1/2 ounce) can cream of chicken soup
1 (15 ounce) jar Cheese Whiz

Steps:

  • Preheat oven to 350 degrees.
  • Saute green pepper and onion.
  • Brown ground meat.
  • Boil noodles (do not fully cook the noodles as they will finish cooking in the oven).
  • In 9x13 casserole dish mix everything together. Cover.
  • Bake at 350 for 20 to 30 minutes, or until cheese is melted and dish is heated throughout.

1 1/2 c velveeta cheese- melted
1 can(s) rotel- lime and cilantro drained
1/2 c sour cream
1 c monterey jack cheese
1 lb ground beef
1 clove garlic
1 pkg taco seasoning
1 medium chopped onion
1 medium chopped bell pepper
1 can(s) sliced black olives-optional
chopped scallions for garnish

Steps:

  • 1. In skillet; brown ground beef with garlic and taco seasoning. Drain. Return to pan and add onion and bell pepper till cooked soft.
  • 2. Meanwhile, add melted velveeta to cooked macaroni. Mix well. In 9 x 13 casserole dish, mix beef and remaining ingredients together with cheesy mac. Top with monterary jack cheese.
  • 3. Bake 350 degrees for 20-25 minutes until hot and cheese is melted. Garnish with chopped scallions. Serve with salsa and jalapenos is you like.
