This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

2 pounds ground beef
¾ cup fresh bread crumbs
½ cup minced onion
2 eggs, beaten
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
3 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.
  • Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

10 slices bacon
⅓ cup ketchup
2 tablespoons prepared yellow mustard
1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
2 eggs, beaten
¼ cup dry bread crumbs
¼ cup mayonnaise
1 tablespoon Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (3 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble into a large bowl.
  • Mix ketchup and mustard in a bowl.
  • Thoroughly combine 1/4 the ketchup mixture, ground chuck, Cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and black pepper with crumbled bacon in bowl; pat the mixture into a 5x9-inch loaf pan. Spread remaining ketchup mixture evenly over top of meatloaf.
  • Bake in the preheated oven until the meatloaf is no longer pink inside, about 45 minutes. Spread French-fried onions over the top of the loaf and return to oven until onions are browned and an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), 10 to 15 more minutes.

3 slices bread, torn into small pieces
1/2 cup milk
1 1/2 lb lean (at least 80%) ground beef
8 slices bacon, crisply cooked and crumbled
1 cup finely shredded sharp Cheddar cheese (4 oz)
1/4 cup dill pickle relish
1/2 cup finely chopped onion
1 clove garlic, finely chopped
1 egg, slightly beaten
1/3 cup ketchup
1 tablespoon packed brown sugar

Steps:

  • Heat oven to 350°F. Line 9x5-inch loaf pan with foil; spray foil with cooking spray.
  • In large bowl, mix bread and milk. Let stand 5 minutes to absorb milk. Add beef, all but 2 tablespoons of the bacon, the shredded cheese, relish, onion, garlic and egg. Mix until well combined. Shape mixture into 8x4-inch loaf. Place in pan.
  • In small bowl, stir together Topping ingredients. Spread on top and sides of loaf. Top with reserved 2 tablespoons crumbled bacon.
  • Bake uncovered 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 160°F. Cool 10 minutes.
  • Cut meatloaf into slices to serve. Top with desired burger toppings, such as pickle relish, ketchup and mustard.

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together 1/2 cup ketchup and brown sugar for glaze; set aside. In a large bowl, combine onions with ground chuck, 1 egg, 1/2 cup reserved breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined. Gently fold in cheddar.
  • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.

1 teaspoon house seasoning (Paula Deen's House Seasoning Mix)
1 medium onion, chopped
1 medium green pepper, chopped

1 cup Ritz cracker, crushed up
1 teaspoon black pepper
2 slices bread
1 (10 ounce) can cream of mushroom soup
1 cup milk (or 1/2 milk and 1/2 whipping cream)
1 1/2 cups shredded cheddar cheese
green onion, chopped (optional)
fresh parsley, chopped (optional)

Steps:

  • Preheat oven to 350'.
  • Grease a deep dish meatloaf pan with pam.
  • Place 2 slices of bread on bottom of dish (this will catch the grease from the meatloaf).
  • Mix together, ground beef,house seasoning,chopped onion and green pepper,1c shredded cheese, worcestershire sauce,sour cream,ritz crackers and black pepper.
  • Place in meatloaf dish and bake 45 minutes.
  • Discard bread pieces after baking. Place meatloaf on a large plate.
  • For the cheese sauce --.
  • Place soup, milk (whipping cream if using)in a sauce pan and heat on medium heat.
  • Add 1 1/2c. cheddar cheese and stir to combine.
  • When cheese is melted add, green onion and parsley if desired.
  • Pour over meatloaf and enjoy!

Steps:

  • Preheat oven to 350 degrees F.
  • Mix all ingredients together, except the bread slices and Sauce. Shape into a loaf. Line a 1 1/2-quart loaf pan with the bread slices. Place meatloaf on top. Bake loaf for 1 hour and 15 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.
  • For the sauce: Heat the soup and milk over medium heat; add the cheese. Add the chopped onions and parsley to the sauce, if desired. Pour Sauce over the meatloaf or pass at the table.

8 slices of thick bacon
3 lbs ground chuck
2 cups fresh breadcrumbs
6 slices of a sharp cheddar cheese (sandwich size slices)
1 cup chopped onion
4 tablespoons mayonnaise
4 tablespoons sweet pickle relish
4 teaspoons dry mustard
1 1/2 teaspoons salt
1 teaspoon pepper
2 eggs
1/2 cup ketchup or 1/2 cup chili sauce

Steps:

  • Heat oven to 350 degrees. In a medium pan, cook bacon just until limp. Remove from pan and set aside. Remove most of the grease and saute the onions just until soft, cool, and set aside.
  • In a small bowl, mix the eggs, mayo, pickles, onions, dry mustard, salt, & pepper, just to combine. Place meat and bread crumbs in a large bowl, and mix in the egg mixture. Mix well. With your hand, score the meat into 3 equal sections, just eyeball it if you want. Take one section of the meat mixture and shape it into an oval about 1 inch thick. This is the bottom layer of the meat loaf. Place 3 slices of the cheese on top of this loaf making sure that they are not hanging over the edge of the meat loaf. You don't want it to melt and run out. Take the next 1/3 section of meat, place it on top of the cheese layer and mold it to the same size as the bottom layer. Lay the last 3 slices of cheese on this layer contuning to keep the cheese away from the edges. Place the rest of the mixture on the top and shape to the rest of the meat loaf. Smooth the sides of the loaf with a little water on your fingers so that you can't see that it was done in layers, and to make sure the cheese won't ooze out when it melts. It may seem like alot of fuss, but it is WELL worth the little extra effort. Spread the ketcup or chili sauce over the top, then place the bacon strips across the meatloaf sideways instead of the length, covering the entire loaf. Bake for 1 hour, or until it reaches an internal temp of 160. Remove from oven and tent with foil for about 10 minutes to set. When you slice this, you will be able to see the 2 cheese layers. This sets up nicely and will be great for leftover sandwiches -- .

I changed a TON of things from the original because the first time I made it, I baked the muffing until they were burnt on top, but they never cooked on the inside. I added more breadcrumbs and subtracted some of the moist ingredients to get this recipe turned into something not quite so disappointed (but at least the cooked tops tasted good!).

2 lbs lean ground chuck or 2 lbs ground round
1 cup white breadcrumb (2 slices white bread)
2 cups sharp cheddar cheese, coarsely shredded (8 ounces)
2 eggs
1 large sweet onion, chopped
8 tablespoons barbecue sauce, divided use
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Preheat the oven to 350°F
  • In a large skillet, cook the bacon over medium heat until browned. Remove the bacon from the skillet, drain, and crumble. In the remaining fat in the skillet, saute the onion until lightly browned, about 5 minutes.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, cheese, eggs, sauteed onion, reserved bacon pieces, 4 tablespoons of the barbeque sauce, worcestershire sauce, salt, and pepper.
  • Shape the mixture into a loaf and place in a large 2" deep baking pan. Spread the top of the loaf with the remaining 4 tablespoons of barbeque sauce.

1 sweet onion (such as Vidalia®), chopped
½ cup ketchup
2 tablespoons chili powder
2 tablespoons ancho chile powder
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 teaspoon garlic powder
2 pounds ground sirloin
4 ounces shredded extra-sharp Cheddar cheese
4 ounces shredded pepper jack cheese
2 eggs, beaten
1 cup bread crumbs
1 serving cooking spray
½ cup ketchup

1 teaspoon ground ancho chile pepper

  • Cook and stir bacon in a large skillet over medium heat until bacon is translucent and beginning to brown, about 5 minutes; stir in onion and continue cooking and stirring until bacon is browned and sweet onion is translucent, about 5 more minutes.

5 slices white bread, crusts removed and cut into small cubes
1/4 cup milk
5 tablespoons ketchup, divided
2 tablespoons mustard
1/2 yellow onion, cut into chunks
3 garlic cloves
1/4 cup sliced pickle, drained
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt

1 1/2 lbs ground beef
1/2 cup shredded sharp cheddar cheese
1 egg, beaten
4 ounces Velveeta cheese, sauce pouch
chopped parsley
chopped dill pickle
diced cherry tomatoes

Steps:

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • In a large skillet, cook the bacon over medium heat until crisp. Transfer to a paper-towel-lined plate and reserve.
  • Add the milk, 2 tablespoons of ketchup, and the mustard to a bowl and whisk to combine. Add the bread and toss to combine. Set aside.
  • Add the onions and garlic to a small food processor and pulse until finely chopped.
  • Add the pickles and pulse until chopped.

  • Preheat oven to 350°F degrees. In a large bowl, combine bread cubes, milk, and egg, using a fork to break up the bread cubes. Add onions, salt, and pepper, and mix well. Add ground beef, incorporating the egg mixture and onion with a fork or hands. On a parchment-lined baking sheet, place half the beef mixture on the sheet and shape into a 4.5-inch by 9.5 inch rectangle. Top the beef with 10 pickles and 3 cheese slices. Add the remaining beef mixture on top of the pickles and cheese, smoothing with a fork or hands and sealing the sides to prevent the cheese from melting out. Bake in a preheated oven for 1 hour and 10 minutes (or until inserted meat thermometer reads 165F degrees). Definitely not for anyone watching their calories or fat intake, but perfect for the low-carb diet or the occasional splurge!

7 green onions (1 bunch)
1 lb lean bacon
2 lbs ground beef (93% lean)
1 lb cheese (4 cheese Mexican or whatever kind you like)

1 tablespoon adobo seasoning (Goya brand, usually found in the international food isle of the store by hispanic foods. If you can')
1 tablespoon garlic, minced
1 cup barbecue sauce (Bull's Eye brand, doesn't have high fructose corn syrup)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Use food processor to grind green onions to a pulp; place in a large bowl.
  • Grind uncooked bacon to a pulp; combine with green onions.
  • Add ground beef, cheese, black pepper, Adobo seasoning, and minced garlic.
  • Mix thoroughly with hands.
  • Place in meatloaf pan.
  • You can glaze meatloaf with 1 cup Bulls Eye BBQ sauce prior to baking. We put it on individually after we had cooked it but thought it might taste better this way.

2 lb ground beef
1 medium yellow onion, diced
2 clove garlic, minced
1 c saltine crackers, crushed (ritz works well too)
1 tsp onion powder
1 tsp garlic powder
1 tsp montreal steak/burger seasoning
1-2 pinch black pepper
3 Tbsp dill pickle relish or chopped dill pickles
2 Tbsp heinz 57 sauce
1 Tbsp yellow mustard
1 Tbsp worcestershire sauce
2 eggs
2-3 Tbsp heavy cream or milk
1/2 c cheddar cheese, shredded
3-4 slice bacon, chopped & fried crisp
1 1/2 c catsup

Steps:

  • 1. In skillet on stovetop fry bacon pieces until crisp, remove from pan and drain on paper towels. In a large mixing bowl gently fold together all ingredients except catsup.
  • 2. Spray medium rectangle baking dish or loaf pan with nonstick spray.
  • 3. Squirt or "frost" meatloaf with catsup. I probably use more than 1/4 C as you can see in the photo.
  • 4. Bake at 350 degrees for 1 hour 20 minutes. About 1/2 way through baking time I try to use a turkey baster to remove the grease that has cooked out of the ground beef dish during the baking process.
  • 5. For the "Deluxe" I serve this meatloaf with a side salad made with iceberg lettuce, sliced tomato & thin sliced raw onion. It really does taste like a Deluxe Bacon Cheeseburger.

" CHEESEBURGER" MEATLOAF FOR LACTOSE INTOLERANT CHEESE

1 cup galaxy foods soy Veggie Shreds cheese (cheddar flavor)
1/2 cup Italian seasoned breadcrumbs
2 eggs
3 tablespoons low sodium soy sauce
1/2-3/4 teaspoon ground sage
1/2 teaspoon ground coriander
1 dash oregano
2 -3 chopped fresh garlic cloves
1/2 medium chopped red onion
1 tablespoon fresh ground pepper (or to taste)
1/2 tablespoon adobo seasoning (up to a whole tbs to taste)
1/2 cup ketchup (and some extra squirts for topping)
sea salt (I put a dash)
1 tablespoon olive oil

Steps:

  • Preheat oven to 350°F.
  • Thaw meat in advance and place in a large mixing bowl.
  • stir in bread crumbs, sage, coriander, Adobo, oregano, pepper and salt.
  • Use hands to mix in eggs, ketchup, soy sauce, soy cheese and red onion (mixing in one ingredient at a time and being sure not to over mix-meat should not feel sticky.) Divide mixture in half and form into 2 loaves.
  • Place loaves side by side (not touching) in a medium sized lasagna pan.
  • Use fingers to open the top of the loaves and sprinkle in the garlic and add 1/2 a tbs of olive oil to each loaf and squeeze closed.
  • Close loaves with hands and top with ketchup if desired (I highly recommend that part). Cook at 350 for 1 hour.
  • Let stand 5-10 minutes and serve warm!

1 tbsp Worcestershire sauce

/14 tsp black pepper
1/3 cup ketchup
1 tbsp yellow mustard
6 tbsp french-fried onions
cooking spray

Steps:

  • Preheat oven to 350 In a large bowl, combine beef, bacon, cheese, EggBeaters, oats, mayo, Worcestershire, salt and pepper, mixing well. In a small bowl, combine ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture and reserve the rest. Divide meat mixture evenly among a 12 muffin tin that has been coated with cooking spray. Spread remaining ketchup mixture over each meatloaf "muffin." Bake for 20 to 25 minutes. Remove from oven and sprinkle 1/2 tablespoon french-fried onions over each "muffin." Bake another 5 minutes or until meat is no longer pink.
