CHEESEBURGER MEATLOAF

Cheeseburger Meatloaf image

This meatloaf is extremely juicy, and the potential variety of different flavors is as big as your imagination. I've done American cheese with ketchup and mustard on top and served with dill pickle chips. Another one might be Swiss cheese and mushroom topping.

Time 2h30m

Yield 4 to 6 servings

Number Of Ingredients 14

Nonstick cooking spray, for the pan
6 slices Texas toast, cubed
1/2 cup milk
2 pounds ground beef
6 strips crisp cooked bacon, chopped
2 large eggs
2 red onions; 1 finely chopped and 1 thinly sliced
1 cup plus 2 tablespoons ketchup
1/4 cup plus 1 tablespoon mustard
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
8 ounces Cheddar, cut into small cubes, plus 1 cup grated Cheddar
1/4 cup grated yellow onion (from about 1/2 onion)
Dill pickle chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a broiler pan with nonstick spray.
  • Mix together the bread and milk in a bowl and set aside.
  • Add the ground beef, bacon, eggs, chopped red onion, 2 tablespoons ketchup, 1 tablespoon mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a large bowl. Add the soaked bread and mix with your hands, trying to keep the mixture light. Gently mix in the cubed Cheddar, making sure to distribute it evenly throughout the meat.
  • Form the meat mixture into a loaf approximately 6 to 8 inches wide and 1 1/2 inches thick on the prepared pan. Mix the grated yellow onion with the remaining 1 cup ketchup, 1/4 cup mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper in another bowl. Spread half of the sauce on top of the meatloaf. Tent the pan with foil and bake for 1 hour.
  • Remove the foil, add the rest of the sauce and continue baking until the internal temperature reaches 160 degrees F and the meatloaf is no longer pink in the middle, another 35 to 40 minutes. Sprinkle on the grated Cheddar and return to the oven for 5 minutes to melt. Let the meatloaf rest for 10 minutes before removing to a platter.
  • Slice and serve with the sliced red onions and dill pickle chips.

CHEESEBURGER MEATLOAF WITH FAMOUS BURGER SAUCE RECIPE - (4.6/5)

Cheeseburger Meatloaf with Famous Burger Sauce Recipe - (4.6/5) image

Provided by á-4084

Number Of Ingredients 18

MEATLOAF:
2 pounds ground beef
1 cup white bread cubes
1/4 cup milk
1 egg, beaten
1/2 cup onion
1/2 teaspoon salt
1/4 teaspoon black pepper
20 pickles, divided
6 slices American cheese, divided
BURGER SAUCE:
1/2 cup light mayonnaise
3 tablespoons sweet pickle relish
1 tablespoon yellow mustard
3/4 teaspoon paprika
1/2 teaspoon white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder

Steps:

  • Preheat oven to 350°F degrees. In a large bowl, combine bread cubes, milk, and egg, using a fork to break up the bread cubes. Add onions, salt, and pepper, and mix well. Add ground beef, incorporating the egg mixture and onion with a fork or hands. On a parchment-lined baking sheet, place half the beef mixture on the sheet and shape into a 4.5-inch by 9.5 inch rectangle. Top the beef with 10 pickles and 3 cheese slices. Add the remaining beef mixture on top of the pickles and cheese, smoothing with a fork or hands and sealing the sides to prevent the cheese from melting out. Bake in a preheated oven for 1 hour and 10 minutes (or until inserted meat thermometer reads 165F degrees). Once the meatloaf reaches the desired internal temperature, add the remaining pickles slices and American cheese to the top of the loaf and bake an additional 3-4 minutes or until the cheese is melted. Top the meatloaf with half the burger sauce (see instructions below) and serve the remaining sauce on the side. In a small bowl, combine the mayonnaise, relish, mustard, paprika, vinegar, garlic powder and onion powder. Mix well and store in the fridge until ready to use. The burger sauce can be made and served immediately, but it is best to make it at least 30 minutes before using to allow the flavors to blend together. The meatloaf can be made the night before. Simply wrap the loaf in plastic wrap and store on a plate or platter in the fridge until you are ready to bake it. Serving suggestion: Serve the meatloaf with lettuce salad and crusty bread with sesame seeds.

CHEESEBURGER MEAT LOAF

Cheeseburger Meat Loaf image

I created this meat loaf one day when I wanted to make cheeseburgers-my husband's favorite-but it was too chilly to grill outside. I've served it numerous times since then, and it never fails to get rave reviews. Even your most finicky eater will enjoy this oven-baked main dish. And you'll appreciate the price-just 51¢ a serving. -Paula Sullivan Barker, New York
