HOMINY CASSEROLE

Hominy Casserole image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 11

Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

Tips:

  • Use fresh ingredients: Fresh hominy, bacon, and cheese will give your casserole the best flavor. If you can, try to find hominy that is still in its husk. This will help to preserve its flavor and texture.
  • Don't overcook the hominy: Hominy is a delicate grain, and it can easily become overcooked. Be sure to cook it according to the package directions, or until it is just tender.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of your casserole. Use a sharp cheddar cheese or a Monterey Jack cheese for a classic flavor. You can also experiment with other types of cheese, such as pepper Jack cheese or queso fresco.
  • Don't be afraid to add your own spices: This recipe is just a starting point. Feel free to add your own spices and herbs to taste. Some good options include chili powder, cumin, garlic powder, and onion powder.
  • Serve immediately: This casserole is best served immediately after it is cooked. The hominy will start to lose its texture if it sits for too long.

Conclusion:

Cheesy bacon and hominy casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover hominy. This casserole is sure to be a hit with your family and friends.
