PORK CHOPS WITH APPLES, ONIONS AND CHEESY BAKED POTATOES

Pork Chops With Apples, Onions and Cheesy Baked Potatoes image

A simple, cold-weather dinner for two in about 40-45 minutes from start to table. I often tend to make it up and experiment with my own version of what I cook. (hence my name) That was indeed the case with this yummy pork chop dinner. I think it's best served with fresh dinner bread or rolls. If you want to make this dinner for more than two just figure it this way : 1 apple, 1/2 onion, 1 potato, 1 pork chop per person. Use amounts of spices, cheese, oil and butter as necessary. Note* Using soft apples like McIntosh won't work well since they'll get too soft, too fast. You want to keep some substance to the onions and apples.

Time 45m

Number Of Ingredients 7

1 Tbsp butter
7 large onions, chopped
1/2 c self-rising flour
1/2 tsp each salt and pepper, i used white pepper
1-1/4 c shredded cheddar cheese, divided
1-1/4 c shredded monterey jack cheese, divided
4 scallions, chopped

Steps:

  • 1. Heat oven to 350. Spray a 1-1/2-quart casserole dish w/ cooking spray. In lg skillet over med-high heat, melt butter. Add onions, saute until soft, about 10 ins.
  • 2. In bowl, combine flour, salt and pepper. Add 1 cup cheddar cheese and 1 cup monterey jack cheese, add scallions. Add onions.
  • 3. Pour into casserole dish. Sprinkle remaining cheeses over top. Bake until bubbly, about 30 mins.

Tips:

  • Select the Right Onions: Choose medium to large yellow or white onions for this recipe. These varieties hold their shape well during baking and have a mild, slightly sweet flavor that complements the cheese and herbs.
  • Clean and Prepare the Onions Properly: Before baking, peel and trim the onions, removing the root end and any tough outer layers. Cut each onion in half lengthwise, creating two halves that are about 1 inch thick.
  • Use a Sharp Knife: When slicing the onions, use a sharp knife to ensure clean, even cuts. This will help the onions cook evenly and prevent them from falling apart during baking.
  • Hollow Out the Onion Halves: Using a small spoon or melon baller, carefully hollow out the center of each onion half, creating a small well for the cheese filling.
  • Generously Season the Onions: Before filling them with cheese, season the onion halves liberally with salt, pepper, and any other desired seasonings. This will enhance the flavor of the onions and the overall dish.
  • Use a Variety of Cheeses: Feel free to experiment with different types of cheese for the filling. A combination of sharp cheddar, mozzarella, and Parmesan is a classic choice, but you can also use Gruyère, Gouda, or any other cheese that melts well.
  • Don't Overfill the Onion Halves: When filling the onions with cheese, don't overstuff them. Leave a bit of space at the top so that the cheese doesn't bubble over during baking.
  • Bake Until the Cheese is Melted and Golden Brown: Bake the stuffed onions in a preheated oven until the cheese is melted and bubbly, and the tops are golden brown. This usually takes around 20-25 minutes, but the exact time may vary depending on the size of the onions and the type of cheese used.
