I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a. 1 (12 ounce) package frozen cauliflower, thawed
1/2 lb smoked sausage (I used Hillshire Farms with the yellow packaging )
1 1/2 tablespoons vegetable oil
4 tablespoons margarine or 4 tablespoons butter
4 tablespoons flour
1 1/4 cups milk (may not use all of this )
1 1/2 cups sharp cheddar cheese, grated (divided)
1 teaspoon ground black pepper (to taste)
1/2 teapoon salt (to taste)

Steps:

  • Pre-heat oven to 350F degrees.
  • In a medium skillet heat oil and,brown sausage and onion, ( If using ) and set aside ( drain if needed ).
  • In a medium saucepan, melt butter/margarine; add flour and cook until light yellow and pasty-looking.
  • Add a little milk at a time and stir until slightly thickened.
  • Remove from heat and add 1 cup of cheese, salt and pepper and stir until well blended.
  • Then fold the cauliflower and smoked sausage into the cheese sauce, coating well.
  • Place into a greased 2 quart rectangle or a 8 x 8 square baking dish.
  • Sprinkle top with remaining cheese and sprinkle with paprika if desired and bake for 30 minutes or until golden brown.

1 cooking spray
2 tablespoons salt
1 large head cauliflower, cut into small florets
2 cups low-fat cottage cheese
2 cups low-fat sour cream
¼ cup melted butter
¼ cup green onions, finely chopped
2 cloves garlic, minced
1 teaspoon Worcestershire sauce
1 dash hot pepper sauce (such as Tabasco®)
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup grated Parmesan cheese
⅓ cup chopped blanched almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a baking dish with cooking spray.
  • Bring a large pot of water to a boil and season with 2 tablespoons salt. Add cauliflower and cook until crisp-tender, about 5 minutes. Drain well and place between several layers of paper towels to dry. Transfer cauliflower to a large mixing bowl and set aside.
  • Combine, cottage cheese, sour cream, butter, green onions, garlic, Worcestershire sauce, hot sauce, salt, and pepper in a bowl. Stir cheese mixture into the bowl with the cooked cauliflower and transfer to the prepared baking dish. Spoon Parmesan cheese on top. Cover with an oven-proof lid or aluminum foil.
  • Bake in the preheated oven for 30 minutes.
  • Meanwhile, heat a small skillet over medium heat and add almonds. Cook, stirring constantly, until lightly toasted, 3 to 5 minutes.
  • Sprinkle almonds on top of cheesy cauliflower bake and return to the oven for 10 minutes more.

This sounds like a weird combination of ingredients, but it's really good. I adapted this from a higher-fat recipe I found on the internet. It's still not low fat, but at least better for you than the original. Delicious left over too! Leftovers can be put into a baked potato for another main dish meal, or stir cooked rice and smoked sausage or cooked chicken or ham into it and re-bake it for another casserole. It freezes well for use later on in a potato, or as a soup if you puree it. You can use real mayo, miracle whip, or the store brand equivalent. Also velveeta (4-6 ounces) works as well as cheddar. 18 saltines is about 1/2 a sleeve of saltines from the box. You don't have to really measure them exactly. You can also use other crackers that you have such as cheese-its, or ritz types that are a little stale.

1 head cauliflower
1/2 cup Miracle Whip
1 1/2 cups milk
1 cup cheddar cheese, shredded
1/8 teaspoon salt
1/4 teaspoon pepper
18 saltines
1/4 cup margarine
1/4 teaspoon mustard

Steps:

  • Prepare the cauliflower by steaming it for about 10 minutes until it's slightly tender, but not squashy. You can either cut it into pieces or leave it whole as you desire. Whole makes a dramatic presentation, cut is good for easy serving.
  • While the cauliflower is cooking, crush the crackers and put into a bowl with the softened margarine. Stir with a fork until it all goes together and the crackers are coated, set aside.
  • In a medium saucepan, bring the miracle whip, salt, pepper, mustard,and milk to a boil over medium heat, stirring with a wire whisk. Boil for one minute, then add the cheese. Stir until the cheese is melted and the sauce is smooth.
  • Put the cauliflower in a 9x13 baking dish, pour the cheese sauce over the top.
  • Sprinkle the cracker/butter mixture over the top, and then place the pan in the oven broiler for a few minutes until the topping is browned. Do not step away from the oven because this browns very quickly!
