SLOW COOKER CHICKEN TATER TOT CASSEROLE
Tater tot casserole made in the slow cooker with chicken and bacon.

Steps:
- Place half of the tater tots in the bottom of the slow cooker. Spread them out so they are an even layer.
- Add the cubed chicken in a layer over the tots. Sprinkle over half of the bacon.
- In a large bowl, whisk together the cream of chicken soup, milk, salt, pepper, onion powder, garlic powder and diced onion.
- Pour this mixture over the tots, chicken and bacon.
- Add remaining tots, arrange them neatly if desired.
- Sprinkle over the cheese.
- Place the lid on the slow cooker and cook on LOW for 5 hours without opening the lid during the cooking time.
- When the cooking time is done add the remaining bacon and sprinkle over the green onion.

- Grease the bottom of the crock pot. Layer 1/2 the tater tots on the bottom of the pot. Sprinkle with 1/4 of the jar of bacon bits. Combine the two cheeses, and sprinkle 1/3 of it over the bacon and tots. Top cheese with the chicken breasts. Sprinkle chicken with salt and pepper to taste. Top chicken with another 1/3 of cheese. Sprinkle with another 1/4 of the jar of bacon bits. Add remainder of the tater tots. Top with final 1/3 of the cheese. Pour milk over the top. Set crock pot on high and cook 3-4 hours.

- Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Crumble once cool enough to handle.
- Season chicken pieces lightly with salt and pepper.
- Grease the bottom of a slow cooker with bacon grease and layer 1/2 of the potato nuggets on the bottom. Sprinkle with 1/2 of the bacon bits. Mix Colby cheese and Monterey Jack cheese together in a bowl and sprinkle 1/3 of the cheese mixture on top. Add chicken in 1 layer and top with 1/2 of the remaining cheese mixture. Sprinkle with remaining bacon bits and top with remaining potato nuggets. Sprinkle rest of the cheese mixture on top and pour milk over everything.
- Cover the slow cooker and cook on High until chicken is cooked though and cheese has melted, 3 to 5 hours.

- 1. Spray the bottom of the crock pot. Put frozen vegetables in the crock. Layer ½ the tater tots on the bottom of the pot. Sprinkle ½ of the bacon pieces on top of the tator tots. Combine the two cheeses and sprinkle ⅓ of it over the bacon,vegetables and tots. Top cheese with the chicken breasts.

This is a simple throw-together dish I came up with that is great for a Sunday after-church meal. Note: You can fry your own bacon for this recipe. I like the taste of bacon but cannot handle the lingering smell it leaves in the house when you fry it, so I just buy the jarred bacon for the few times a year I use it.

- Spray 5-quart slow cooker with cooking spray. In 10-inch skillet, cook bacon over medium heat until crispy. With slotted spoon, transfer bacon to paper towel-lined plate; cover and refrigerate.
- Meanwhile, in medium bowl, mix flour, Montreal chicken seasoning and salt. Add chicken, and toss to coat; set aside.
- Increase heat to medium-high. Add chicken to skillet, and cook 4 to 5 minutes or until browned on first side. Turn chicken, and cook 1 to 2 minutes longer or until beginning to brown. Meanwhile, mix broth, wild rice, green onion whites, celery and carrot in slow cooker. Refrigerate green onion greens.
- Add chicken and pan drippings to rice mixture in slow cooker. Cover and cook on Low heat setting 7 to 8 hours. Chop chicken, and return to cooker; stir in 3 cups of the cheese, replace cover and heat 10 to 15 minutes or until cheese is almost melted. Stir in whipping cream. Divide soup among 8 bowls. Top with remaining 1 cup cheese, reserved bacon and green onion greens.

BACON CHEESY CHICKEN (CROCK POT)
I found this AMAZING recipe from the "crockpot lady" on her crockpot365 blogspot - also amazing. Anyway, this chicken is ridiculously easy and so versatile. It makes a mean sandwich, delicious wrap,is great served with french fries, or just straight up. You could also place it on a bed of lettuce for a great salad. The recipe helps keep they kitchen tidy and uses less energy by using a slow cooker! My whole family was "humming" when I made this and served it - it's a keeper!

- 1. Prepare your Crock Pot by giving it a good coating of non-stick cooking spray.
- 2. Next, begin layering in your ingredients. Start with half of the tater tots, followed by 1/3 of the bacon and then 1/3 of the cheese. Now layer in all of your chicken; sprinkle with salt and pepper, to taste.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 8- or 10-inch nonstick skillet, heat oil over medium heat. Cook onion in oil 3 to 5 minutes, stirring occasionally, until tender.
