Yield 6

Number Of Ingredients 13

4 slices bacon
¾ pound chicken breasts, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 medium shallot, finely chopped
1 clove garlic, minced
2 cups water
1 cup whole milk
4 cups elbow macaroni
1 tablespoon ranch dressing mix
3 cups broccoli florets
1 (8 ounce) package shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
  • Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
  • Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.
  • Return chicken to the Dutch oven and add broccoli. Cook until pasta is tender and chicken is cooked through, 3 to 4 minutes. Stir in Cheddar cheese and sour cream to combine. Crumble cooked bacon over the top and serve hot.

Categories     Macaroni And Cheese

Time 40m

Yield 1 cup, 6 serving(s)

Number Of Ingredients 10

2 cups diced cooked chicken breasts
2 cups shredded cheddar cheese
1 cup milk
2 cups chopped cauliflower
8 ounces elbow macaroni, cooked
1 (1 ounce) package Hidden Valley Original Ranch Dressing Mix
1 cup Greek yogurt
1/3 cup bacon bits
1 cup plain breadcrumbs
salt and pepper

Steps:

  • Combine milk, greek yogurt, and hidden valley ranch seasoning and salt and pepper until smooth.
  • Stir in diced chicken, noodles, cheese and cauliflower.
  • Spread evenly in 13x9 baking dish and top with bacon bits and breadcrumbs.
  • Bake at 350 for 35 minutes, or until breadcrumbs are golden brown and casserole is bubbly. Serve and enjoy!

Tips:

  • Use a variety of cheeses to create a flavorful and gooey casserole. A blend of cheddar, mozzarella, and Parmesan is a classic choice, but you can also experiment with other cheeses such as Gruyère, Gouda, or fontina.
  • Cook the bacon until it is crispy. This will add a smoky flavor and texture to the casserole.
  • Use a high-quality ranch dressing. A homemade ranch dressing will give the casserole the best flavor, but you can also use a store-bought dressing if you are short on time.
  • Don't overcook the pasta. It should be cooked al dente, or slightly firm to the bite.
  • Assemble the casserole in a 9x13 inch baking dish. This will ensure that the casserole cooks evenly.
  • Bake the casserole until it is bubbly and golden brown. This usually takes about 30 minutes.
  • Let the casserole cool for a few minutes before serving. This will help the cheese to set and the casserole to hold its shape.

Conclusion:

Cheesy Chicken Bacon Ranch Pasta Casserole is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover chicken and bacon. The combination of cheese, bacon, ranch dressing, and pasta is sure to please everyone at the table.
