When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

2 cups shredded cheese (whatever floats your boat, I used a preshredded Colby or Monterey Jack blend)
3 ounces cream cheese, softened
1 -2 teaspoon garlic powder
1 -2 teaspoon instant minced onion (or a smidge of grated fresh)
12 corn tortillas
15 ounces enchilada sauce
1/2 cup more shredded cheese

Steps:

  • First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
  • Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
  • Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
  • Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
  • Pour the rest of the sauce on top, spreading it to cover.
  • Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
  • For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.

2 teaspoons salt
1 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
2 1/2 pounds boneless pork butt, cut into 3-inch chunks
3 cups salsa verde
1 cup low-sodium chicken broth
4 cloves garlic, peeled and smashed
1 medium onion, quartered
1 cup light sour cream, plus more for serving
10 medium flour tortillas
2 cups shredded Monterey Jack cheese
Fresh cilantro, for serving, optional

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix the chili powder, salt, oregano and pepper together in a small bowl. Sprinkle the cubed pork chunks with the spice mixture and put into a large Dutch oven. Add 1 cup of the salsa verde, chicken broth, garlic and onions. Stir together with a wooden spoon. Put the pot on high heat and bring the mixture to a simmer. Transfer to the oven and cook, covered, until the pork is tender and easily shreds, about 1 hour 45 minutes. Once done, shred the pork in the Dutch oven with a pair of tongs or 2 forks.

3 teaspoons cumin

  • Heat oven to 350. Saute onion and garlic in oil until onions are softened.

1/2 cup small curd creamed cottage cheese
3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
1 small tomato, chopped (1/2 cup)
2 medium green onion, sliced (2 tablespoons)
1 teaspoon chili powder
1/4 teaspoon salt
1 small garlic clove, finely chopped
4 corn tortillas (6 inches in diameter)
1/4 cup jarred Old El Paso™ taco sauce

Steps:

  • Heat oven to 375°F. Spray two 14-ounce shallow oval casseroles or one rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
  • Mix cottage cheese, 1/2 cup of the Monterey Jack cheese, the tomato, onions, chili powder, salt and garlic. Spread about 1/3 cup of the cheese mixture on each tortilla. Roll up tortillas; place seam side down in casseroles. Spoon taco sauce over tortillas. Sprinkle with remaining 1/4 cup Monterey Jack cheese.
  • Bake uncovered 15 to 20 minutes or until hot and cheese is melted.

4 cups water
2 cups uncooked brown rice
1 tablespoon olive oil, or to taste
2 bell peppers, diced
1 onion, diced
2 cups fresh spinach
1 cup green beans
½ cup diced mushrooms
2 teaspoons chili powder, or to taste
½ teaspoon paprika, or to taste
2 (15 ounce) cans fat-free refried beans
10 (8 inch) flour tortillas
2 (10 ounce) cans enchilada sauce
1 (8 ounce) package shredded Mexican cheese blend

Steps:

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Heat olive oil in a large skillet over medium heat. Add bell peppers, onion, spinach, green beans, and mushrooms; cook and stir until soft, about 8 minutes. Season with chili powder and paprika.
  • Spoon refried beans into a microwave-safe container. Cover and microwave until hot, about 3 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a large baking pan.
  • Divide brown rice, bell pepper mixture, and refried beans evenly among tortillas. Roll up tortillas to enclose filling; arrange seam-side down in the baking pan.
  • Pour enchilada sauce over rolled tortillas. Sprinkle Mexican cheese on top.

1 box Rice-a-Roni Spanish style rice
1 1/2 c frozen corn
1 can(s) diced green chilies, 4 oz.
3 c chicken, cooked and cut into small pieces
1 can(s) pinto beans, drained and rinsed, 15 oz.
1 jar(s) salsa, 15.5 oz
3/4 c sour cream
1 can(s) cream of chicken soup, 10.5 oz.
2 1/2 c Mexican blend shredded cheese
3 tsp chili powder
6 extra large flour tortillas

Steps:

  • 1. Cook Rice-a-Roni according to directions on the box. Add corn after you add water and seasoning packet.
  • 2. While rice is cooking, combine in a large bowl: chilies, chicken, pinto beans, 1/2 the salsa, sour cream, cream of chicken soup, 1 cup of cheese, and the chili powder. When rice is done cooking, add half the cooked rice to the other ingredients and stir all together.
  • 3. Spray Crock Pot with non-stick spray. Cut the 6 tortillas in half. Put a large spoonful of filling in the middle of the tortilla and put seam-side down in the bottom of Crock Pot.
  • 4. Spread remaining rice, salsa, and cheese over each layer.
  • 5. Depending on how large your Crock Pot is, you will get either 2 or 3 layers.
  • 6. Turn Crock Pot on low and let everything get all melty and cozy (about 4 hours on low or 2 1/2 hours on high).

AWESOME AND DELICIOUS!! The first time I prepared this dish my DH went crazy scraping his plate! A good OAMC dish for the freezer. Very creamy and easy to prepare. The added toppings give much flavor. This recipe makes a very pretty dish for guests!

2 cups cooked chicken (shred or diced)
1 (10 3/4 ounce) cream of chicken soup
3 ounces cream cheese, softened
1/2 cup sour cream
1 cup salsa
1/2 teaspoon chili powder (or to taste)
8 (6 inch) flour tortillas
1/2 cup cheddar cheese
1 plum tomato, chopped
1 tablespoon green onion, diced

Steps:

  • In a medium bowl mix soup, cream cheese, sour cream, salsa and chili powder.
