GINA'S CHEESY FLAT BREAD

4 ounces goat cheese
8 ounces cream cheese, at room temperature
2 garlic cloves, minced
1 tablespoon freshly chopped basil leaves
2 tablespoons freshly chopped chives
Salt and freshly ground black pepper
Flour, for work surface
3/4 pounds store-bought pizza dough
1 medium red onion, sliced thin
1 zucchini, cut into thin rounds
1/4 cup olive oil
1 teaspoon red pepper flakes
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl fold together the goat cheese, cream cheese, garlic and herbs. Season with a pinch of salt and pepper.
  • Line a sheet tray with parchment paper and lightly flour a work surface. With a rolling pin, roll the dough into an oval shape that fits a half sheet tray and lay out on the parchment paper.
  • Spread dough with the goat cheese mixture, leaving a 1/2-inch edge. Arrange the red onion in a row, overlapping slightly. Repeat with the zucchini.
  • Brush the red onion, zucchini, and crust with olive oil. Sprinkle with red pepper flakes, salt and pepper, to taste, and the Parmesan. Bake in the oven for 25 minutes.
  • Remove from oven and using a pizza cutter, slice into thin strips for serving.

Adapted from an old Quick Cooking. A great bread to serve with a soup meal. I have also used the thin crust boboli with success. Leave off the cheddar and after baking top with fresh grated romano and you can almost image you are eating Chicago Oven Grinders Mediterranean Bread!

1 (1 lb) loaf frozen bread dough, thawed
olive oil
2 -3 teaspoons paprika
1/2 teaspoon dried basil
1/2 teaspoon garlic
1 1/2 cups shredded cheddar cheese

Steps:

  • Pat dough onto the bottom and up the sides of a greased 14-inch pizza pan or 15 x 10 x 1 inch jelly roll pan.
  • Brush olive oil over bread.

1/2 c hot water
2 Tbsp melted butter
1/4 c grated cheddar cheese
1/4 c grated monterrey jack cheese
1/4 c grated parmesan cheese
2 tsp chopped basil
1/2 tsp italian seasoning

Steps:

  • 1. Preheat oven to 450ยบ Mix Bisquick and hot water until stiff dough forms Let stand for 10 minutes
  • 2. Turn dough onto surface generously dusted with Bisquick Gently roll dough in Bisquick to coat Shape into ball Knead 60 times
  • 3. Pat dough into approximately 12" square on ungreased cookie sheet Spread melted butter over dough Sprinkle cheese and spices over top of dough
  • 4. Bake in preheated oven 10-12 minutes until edges are light golden brown
