2 cups uncooked elbow macaroni
1 tablespoon all-purpose flour
1 cup heavy whipping cream
1 cup half-and-half cream
1/4 cup sour cream
1 large egg
1/2 teaspoon ground mustard
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
8 ounces Monterey Jack cheese, cubed
8 ounces cheddar cheese, cubed
2 cups shredded cheddar cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large bowl, whisk the flour, cream, half-and-half, sour cream, egg, mustard, cayenne, salt, pepper and nutmeg until smooth., Drain pasta. Transfer to a greased 2-1/2-qt. baking dish. 4 cups shredded sharp Cheddar cheese, divided
1 (15 ounce) jar Alfredo sauce
2 tablespoons mustard
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
½ cup bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

6 tablespoons unsalted butter
2 shallots, minced
3/4 cup breadcrumbs
1 tablespoon ancho chile power
2 teaspoons chopped fresh thyme
Kosher salt
1 pound mini elbow macaroni
1/4 cup all-purpose flour
4 cups whole milk
2 cups shredded mozzarella cheese
2 cups shredded cheddar cheese
2 cups shredded mild manchego cheese
Freshly ground pepper

Steps:

  • Heat 1 tablespoon butter in a medium skillet over medium-high heat. Add the shallots and saute until translucent, about 5 minutes. Mix in the breadcrumbs until coated, then the chile powder and thyme; season with salt. Remove from the heat and set aside.
  • Preheat the oven to 350 degrees F. Rub 1 tablespoon butter in a 9-by-13-inch baking dish.

1/2 cup butter or 1/2 cup margarine
