Smoked sausage is my new go to meat for a tight budget, so I have been searching for something to use it in besides Jambalaya. I found this recipe in a Taste of Home magazine and loved it! I just had to share it! For a healthier casserole, I use whole wheat pasta, turkey smoked sausage, 98% fat free soup and low fat cheese.

Tips:

  • Choose the right pasta: Penne is a great choice for this casserole because it holds the sauce well and cooks evenly. However, you can use any type of pasta you like.
  • Don't overcook the pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Overcooked pasta will become mushy and won't hold the sauce as well.
  • Use a good quality smoked sausage: The smoked sausage is one of the main ingredients in this casserole, so it's important to use a good quality sausage. Look for a sausage that is made with real meat and has a good smoky flavor.
  • Don't be afraid to add your own spices: The recipe calls for a simple blend of spices, but you can add your own favorites to taste. For example, you could add a pinch of cayenne pepper for a little heat or a teaspoon of dried oregano for a more Italian flavor.
  • Make it ahead of time: This casserole can be made ahead of time and reheated when you're ready to serve it. This makes it a great option for busy weeknight meals.
