1 (12 ounce) package medium seashell pasta
1 (10 ounce) package frozen chopped spinach, thawed
2 eggs
¼ cup olive oil
½ cup bread crumbs
1 ½ (26 ounce) jars tomato basil pasta sauce
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Bring 1/2 cup water to a boil in a saucepan, and cook the spinach 4 to 6 minutes, until tender.
  • Place the cooked pasta in a medium bowl. In a small bowl, whisk together the eggs and oil. Toss the pasta with the cooked spinach, egg mixture, and bread crumbs.
  • Cover the bottom of a 9x13 inch baking dish with 1/3 of the pasta sauce. Pour half of the pasta mixture into the baking dish, and cover with another 1/3 of the pasta sauce. Sprinkle with half of the Cheddar cheese and half of the mozzarella. Layer with remaining pasta mixture, and top with remaining sauce. Sprinkle with the rest of the Cheddar and mozzarella cheeses.
  • Bake 45 minutes in the preheated oven, or until bubbly and lightly browned.

16 oz uncooked spaghetti
3 tablespoons butter
3 cloves garlic, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
1/4 teaspoon crushed red pepper flakes
1 1/2 teaspoons salt
1/2 teaspoon pepper
3 cups milk
1 cup shredded Parmesan cheese
1 box (10 oz) Cascadian Farm™ frozen organic cut spinach, thawed and squeezed to drain
2 eggs, slightly beaten
1 jar (25.5 oz) Muir Glen™ organic tomato basil pasta sauce
3 cups shredded mozzarella cheese (12 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • Cook spaghetti to al dente as directed on package. Drain spaghetti, and add it back to the hot pan.
  • Meanwhile, in 2-quart saucepan, melt butter over medium-low heat. Stir in garlic; cook 1 minute. Stir in flour, pepper flakes, salt and pepper. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Gradually beat in milk with whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; beat in Parmesan cheese and spinach with whisk, then beat in eggs.
  • Toss cheese sauce with hot spaghetti, and add half of the mixture to the baking dish. Spread 1 1/2 cups of the tomato basil pasta sauce over mixture; sprinkle with 1 1/2 cups of the mozzarella cheese. Add remaining half of spaghetti mixture, remaining tomato basil pasta sauce and remaining 1 1/2 cups mozzarella cheese.
  • Bake 30 to 35 minutes or until heated through and cheese is melted and lightly browned on top. Let stand 10 minutes before serving.

A friend of mine made this and gave me the recipe. It is very adaptable to whatever your tastes are and can easily be made to fit your lifestyle and needs! I used rotini in this recipe but the original called for spaghetti (that didn't make sense to me). You could really use any sort of pasta you have on hand! I bought precooked chicken strips to use in the dish and it helped keep the dish speedy and tasty!

6 ounces rotini pasta, uncooked
1 egg
1/4 cup milk
1/2 cup sour cream
6 ounces Baby Spinach, fresh and chopped
14 ounces artichoke hearts, drained and chopped
8 ounces grilled chicken
8 ounces monterey jack cheese, shredded
4 tablespoons parmesan cheese, divided
1 teaspoon dried onion flakes
salt and pepper

Steps:

  • 1. Bring a large pot of lightly salted water to a boil. Cook rotini in boiling watr for 8 to 10 minutes or until al dente; drain. Preheat oven to 350°F (175°C).
  • 2. In a 2 quart casserole dish, whisk together egg, milk and sour cream. Using a wooden spoon, stir in spinach, artichoke hearts, chicken, Monterey Jack cheese, 2 tablespoons Parmesan cheese and cooked rotini. Season with minced onion, salt, pepper and paprika. Top with remaining Parmesan cheese and paprika.
  • 3. Cover and bake in preheated oven for 15 minutes. Remove cover and bake for another 15 minutes. Let stand 2 minutes before serving.

One 12-ounce box fiber-and-calcium-enriched penne
1 tablespoon olive oil
1/2 teaspoon fennel seeds, crushed
3 cloves garlic, thinly sliced
One 28-ounce can no-salt-added crushed tomatoes
1 sprig fresh basil plus 1/2 cup leaves, torn, for garnish
Freshly ground black pepper
One 8-ounce block part-skim mozzarella (half grated, half cubed)
One 16-ounce container 1-percent cottage cheese
1/4 cup grated Parmesan
One 10-ounce block frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat the oven to 400 degrees F. Mist a 2 to 2 1/2-quart rectangular or oval baking dish with nonstick cooking spray.
  • Bring a large pot of salted water to a boil. Add the penne and cook according to package directions for al dente.
  • While the pasta cooks, heat the oil in a medium pot set over medium heat. Add the fennel seeds and garlic and cook until aromatic, about 2 minutes. 2 teaspoon olive oil
1 onion (diced)
4 teaspoon minced garlic
3 boneless, skinless chicken breasts (cubed)
14.5 ounces diced tomatoes (undrained)
24 ounces marinara sauce
3 Tablespoon tomato paste
1¼ teaspoon dried basil
¾ teaspoon dried oregano
¼ teaspoon crushed red pepper flakes
½ cup grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Spray 9x13-inch baking dish with nonstick cooking spray; set aside.
