½ (28 ounce) package Alexia® Crispy Seasoned Potato Puffs
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1 tablespoon taco seasoning mix
1 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Spray 8x8-inch glass baking dish with cooking spray. Place potato puffs and drained tomatoes in baking dish. Sprinkle evenly with taco seasoning; toss together.
  • Bake 25 minutes or until potatoes are golden brown and crisp, turning gently once halfway. Remove from oven; sprinkle with cheese.

This is another one from my Somersize mailing list. It's good for Level 1, in spite of the small amount of flour it contains.

1 cup chopped onion
olive oil, for browning meat
2 lbs ground beef
1 (1 ounce) package taco seasoning
3 eggs
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon flour
1 cup shredded cheddar cheese (more if desired)

Steps:

  • Heat olive oil in medium skillet.
  • Saute onion in olive oil until soft.
  • Brown ground meat with onion.
  • When meat is almost cooked through, add taco seasoning.
  • When meat is cooked completely, drain off grease and set aside to cool.
  • In a large casserole dish, beat eggs.
  • Open diced tomatoes and drain the juice off into a small mixing bowl.
  • Add the flour to the juice of the tomatoes and mix well until the lumps are gone.
  • Add flour/juice mixture to eggs and stir well.
  • Add shredded cheese to egg mixture.
  • Add ground beef and tomatoes to egg mixture and stir well.
  • Bake in a preheated 350-degree oven for 1 hour, or until set and cooked all the way through.
  • You can top with a layer of shredded cheese halfway through cooking time if desired.
  • Serve topped with salsa and sour cream, if desired.

1 lb lean ground beef (or turkey)
2 tablespoons taco seasoning
1/2 cup chopped onion
1 teaspoon minced garlic
1 cup chopped carrot
1 cup corn, frozen
1/2 cup chopped celery
2 cups prepared salsa
1 cup sour cream
1/2 cup cream cheese, softened
1 lb tater tots
3 cups grated cheese

Steps:

  • In a hot skillet scramble fry the onion, minced beef and garlic - breaking up all lumps.
  • Reduce the heat to 50% and add the vegetables, make sure they are chopped rather small (mexi-beans or kidney beans can be added if you so wish to this stage) and taco seasoning, fry for another 2-4 of minutes (until the taco seasoning become fragrant).
  • Pour meat mixture into a greased 20x20 inch ceramic/pyrex casserole dish with high sides.
  • In a large bowl, whisk the salsa, sour cream and creamed cheese (which has been well softened) and pour over the meat.
  • Place tater tots over creamy mixture in a single layer all over (my son loves this job). Top with cheese (he likes this job too).
  • Bake at 375oF (180oC) for 30 minutes.
  • Let stand for 5 minutes before serving.

1 cup dry elbow noodles
1 15 oz can Hunt's® Diced Tomatoes, drained
1 15 oz can Hunt's® Tomato Sauce
1 15 oz can black beans, drained and rinsed
1 large green pepper, chopped
1 package taco seasoning mix
1 cup Mexican taco blend shredded cheese
1 jalapeno, deseeded and diced
1 container sour cream, for garnish
1 bunch cilantro, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • In large pot cook pasta as instructed on the box. Drain and put back into the pot.
  • Add diced tomatoes, tomato sauce, black beans, green pepper and taco seasoning mix to pot. Mix so it's all combined.
  • Put mixture in casserole dish or 12 inch well-seasoned cast iron skillet and sprinkle all your cheese on top. Spread diced jalapenos on top.
  • Bake for 30 minutes.
  • Serve warm and put a nice dollop of sour cream and cilantro on top.
