CHEESY ITALIAN MEATLOAF
Steps:
- Preheat the oven to 350°F. Liberally spray a bundt pan with cooking spray. Have nearby a foil lined sheet pan.
- In a medium-size mixing bowl mix together the ground beef, onion, green pepper, bread crumbs, Parmesan, pasta sauce, parsley, Worcestershire, Italian seasoning, steak seasoning, garlic and salt. Add eggs.
- Using your hands mix until fully combined and the ingredients are evenly distributed. Divided in half.
- Press 1/2 of meatloaf mixture in pan. Arrange the mozzarella cheese over the meatloaf then top with the remaining meatloaf mixture. Press evenly.
- Bake for 45 minutes. Remove from oven. Drain liquid from bundt pan. (Use oven mitts the pan will be hot.) Center foil lined sheet pan on top, then flip to Invert meatloaf onto the pan. Arrange cheese slices overlapping on top.
- Increase oven temperature to 375°F. Return to oven baking for an additional 15 minutes or until cooked through and cheese has melted. Rest on pan for 10 minutes then transfer to a platter or cake stand.
- Serve slices with additional warm pasta sauce on the side.

- Preheat oven to 350ºF. and prepare 9x5 loaf pan by lining it with foil and spraying the foil with nonstick cooking spray.
- In a large mixing bowl, combine all ingredients, except 1/2 of the tomato sauce and the mozzarella.
- After ingredients are combined, transfer the meatloaf mixture to a flat surface, covered with parchment or wax paper. Shape the meatloaf into an oval or square and sprinkle most of the mozzarella over the middle of the meatloaf. Save about 1/4 cup of the mozzarella for the topping. Next, roll the meatloaf up and place it in the loaf pan. Use your fingers or the back of a spoon to press the meatloaf down so that it is all even at the top. Pour the reserved 1/2 of tomato sauce over the top and spread out evenly.
- Bake for 1 hour. Once cooked, remove from oven and sprinkle additional mozzarella cheese over the top. Bake for about 10-15 minutes more.
- Allow meatloaf to cool for about 10 minutes and then cut loaf into 8 even slices. Enjoy with a side salad or another favorite side dish!

- Combine meat, stuffing mix, water and egg in a bowl. Make sure it is well mixed, then set aside for 15 minutes.
- Lay out a rectangle of baking paper, and press the meatlof mixture out to form on large flat rectangle, on the paper.
- Combine the ricotta and garlic, and spread over the meat. Sprinkle with shredded cheese.
- Using the paper to help, roll the meat, swiss roll style.

- Preheat oven to 375°F/190°C.
- In a large bowl combine all the ingredients for the meatloaf. Mix well.
- Spray a 12x4x4 inch loaf pan with non-stick cooking spray.
- Transfer meat mixture to the greased loaf pan, pressing the meat firmly into the pan.
- Brush top of meatloaf with olive oil.
- Place pan onto a baking tray to catch any drippings. Bake in the center rack of oven, uncovered, for 60 to 80 minutes, until internal temperature is 160°F.
- Remove from oven. Carefully drain excess fat and moisture from around the meatloaf.
- Allow meatloaf to rest in pan for 5 minutes to set.

This meat loaf is so flavorful, but doesn't require endless ingredients! It is simple and soooo good. I almost always have the ingredients on hand straight from the pantry. My family loves it, it tastes even better leftover, and it makes the house smell delicious! Can be frozen for OAMC. I have adjusted the breadcrumbs per the reviews, the key is to use only as much as you need to make a moist dough. If your ground beef is very low in fat, like sirloin, you will need fewer breadcrumbs, however higher fat beef, like chuck, will absorb a larger amount of breadcrumbs.
