1 1/2 pounds ground chicken
1 cup panko breadcrumbs
3 scallions, sliced (about 1/2 cup)
1 large egg, lightly beaten
Kosher salt
Sesame seeds, for serving
1/2 cup low-sodium soy sauce
1/2 cup mirin
1 tablespoon rice vinegar
1 tablespoon light brown sugar
1 tablespoon cornstarch
2 cloves garlic, grated
3 tablespoons vegetable oil
4 scallions, sliced
6 cloves garlic, sliced
1/2 teaspoon minced peeled fresh ginger
Pinch red pepper flakes
3 cups cooked white rice
1 tablespoon vegetable oil
1 medium red onion, large dice
1 medium red bell pepper, large dice
1 stalk broccoli, cut into florets (about 2 1/2 cups)
Freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
  • For the meatballs: Combine the chicken, panko, scallions, egg and 1/2 teaspoon salt in a large bowl. Use a 1-ounce scoop to portion the chicken mixture into mounds (about 30 meatballs total), roll each into a ball and place on the prepared baking sheet.
  • Bake until just cooked through, about 10 minutes. Set aside.
  • For the teriyaki sauce: Whisk together the soy sauce, mirin, rice vinegar, brown sugar, cornstarch, garlic and 1 cup water in a medium saucepan. Bring to a boil over high heat and cook until slightly thickened and reduced by half, about 8 minutes. Transfer to a bowl and set aside (you should have about 1 cup).
  • For the garlic fried rice: Heat the vegetable oil in a large nonstick skillet over high heat. Add the scallions and stir-fry 1 minute. Add the garlic, ginger and red pepper flakes and stir-fry until fragrant, 1 minute. Add the rice and 1 tablespoon of the teriyaki sauce and stir-fry until combined and heated through, about 3 minutes. Season with salt. Transfer to a serving platter and keep warm.
  • For the stir-fried vegetables: Heat the oil in the skillet over high heat. Add the onion and bell pepper and stir-fry 1 minute. Add the broccoli and 2 tablespoons water. Season with salt and pepper.
  • Stir-fry until the broccoli is bright green and still crisp, 2 to 3 minutes. Add 1/3 cup of the teriyaki sauce and cook until heated through. (Add more water if necessary, to thin the sauce.) Transfer to the serving platter and keep warm.
  • Finish the meatballs: Add the remaining teriyaki sauce to the skillet and bring to a boil over high heat. Add the meatballs and toss until glazed and heated through, 2 to 3 minutes. Spoon the meatballs over the rice and sprinkle with sesame seeds.

1 cup Cooked rice
10 oz. Boneless skinless chicken thighs
【Marinade】
1/4 tsp. Salt
1/4 tsp. Ground black pepper
1 tbsp. Sake
1 large Egg yolk
【Crispy Coating】
2 cup Corn starch
【Pan-Frying】
1/2 cup Cooking oil
【Sauce】
2 tbsp. Sake
1 tbsp. Mirin
1/3 cup Teriyaki sauce

Steps:

  • Gently pound the meat several times by using the tip, back, and face of a knife respectively. (Pond the chicken with a knife to break the tendons, so the flavors easy to absorb.)
  • In a mixing bowl, add chicken, salt, black pepper, sake, and egg yolk, mix well.
  • On a plate, add corn starch, coat the chicken with corn starch evenly. (Shake off excessive corn starch, fry until golden over medium-low heat. It will scorch if the heat is too high. )
  • In a large cooking pan over medium heat, bring enough oil to 250°F/120°C, then turn the heat to medium-low. Shake off excessive corn starch on the chicken, fry for 3-5 minutes until golden.
  • Add Sake, mirin, and Teriyaki sauce. As soon as the chicken is evenly coated with the sauce, turn off the heat.
  • Cut the chicken into small pieces, put it on a serving plate. Serve with broccoli, carrot, or any vegetable that you prefer, and rice.

Teriyaki is derived from the Japanese root words teri, to shine, and yaki, to broil or grill. That's the way traditional teriyaki looks: shiny and incised with grill marks. In Japan, teriyaki is a mix of soy sauce, sake and the rice wine mirin, which imparts a subtle sweetness. The teriyaki found throughout Seattle, of which this is an adaptation, is a bit more showy. Cooks sweeten with white sugar and pineapple juice. They thicken with cornstarch. Ginger and garlic go into the mix because of the Korean ancestry of many cooks. It is not at all traditional, but it is simple to prepare and addictive to eat. Be sure to plan ahead as you do need to marinate the chicken before cooking. An overnight stay in the fridge is ideal, but many readers have been happy with a quick marinade of an hour or so.

6 cloves garlic, crushed in a press

1 3-inch cinnamon stick
1 tablespoon pineapple juice
8 skinless, boneless chicken thighs
2 tablespoons cornstarch

Steps:

  • In a small saucepan, combine all ingredients except cornstarch and chicken. Bring to boil over high heat. Reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool. Discard cinnamon stick and mix in 1/2 cup water.
  • Place chicken in a heavy-duty sealable plastic bag. Add soy sauce mixture, seal bag, and turn to coat chicken. Refrigerate for at least an hour, ideally overnight.

1 (3 pound) whole chicken, cut in half
¾ cup granulated sugar
¾ cup soy sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced

Steps:

  • Rinse chicken halves, and pat dry with paper towels. Place chicken cut side down in a 9x13 inch baking dish.
  • In a medium mixing bowl, combine sugar, soy sauce, grated ginger and garlic. Mix well, and pour mixture over chicken. Cover and refrigerate for at least 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake chicken uncovered in the preheated oven for 1 hour, basting frequently. Test for doneness, making sure there is no pink left in the meat. Let cool slightly, then cut into smaller pieces to serve.

I have enjoyed teriyaki many times at Japanese restaurants. If I've made it at home I've probably just bought a bottle of teriyaki sauce and brushed it on some chicken. This is an authentic version. I'm very glad I did it. The term teriyaki comes from of two Japanese words 'teri' and 'yaki'. Teri refers to the shine or luster of the glazed sauce, and yaki means to broil or grill the meat.

1 cup soy sauce
1 cup sake
½ cup mirin (Japanese sweet wine)
¼ cup brown sugar
3 green onions, chopped, white and dark green parts separated
2 teaspoons finely grated ginger
10 skinless, boneless chicken thighs
1 teaspoon vegetable oil, or as needed

Steps:

  • Whisk soy sauce, sake, mirin, brown sugar, white parts of green onions, and ginger together in a saucepan; bring to a simmer and cook until sugar dissolves and marinade flavors combine, about 5 minutes. Pour marinade into a bowl and cool to room temperature.
  • Pour 1/2 the marinade into a resealable plastic bag. Add chicken thighs, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 30 minutes to 1 hour.
