CHEERY CHERRY LOAF

You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home. I have also entered my loaf in fairs, where it's always a winner. I'm a widow (three grown daughters) who enjoys baking and crafting.

Number Of Ingredients 11

1 jar (6 ounces) red maraschino cherries
2-1/2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2/3 cup milk
1/3 cup butter, melted
1 jar (8 ounces) green maraschino cherries, drained and cut up
1/2 cup chopped pecans
1 tablespoon grated orange zest

Steps:

  • Drain red cherries, reserving liquid; add water, if needed, to liquid to equal 1/3 cup. Cut up cherries; set cherries and liquid aside. , In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, butter and cherry liquid; stir into dry ingredients just until combined. Fold in the red and green cherries, pecans and orange zest. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.

3 tablespoons butter, soften
1/2 cup sugar
1 large egg
1/2 teaspoon almond extract
1/2 teaspoon vanilla
3 tablespoons maraschino cherries, chopped, juice reserved
2 tablespoons cherry juice (maraschino juice)
2 tablespoons orange juice
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a bowl, beat butter and sugar until creamy. Add the egg, almond extract and vanilla while beating. Add cherries and the juices. Beat to combine everything.
  • Put flour in a small bowl. Add baking powder and salt. Add to the mixture of cherries. Stir just enough to wet the dry ingredients. Pour the dough in a greased loaf pan. Cook in the oven at 350 F for about 45 minutes or until a toothpick inserted in it comes out dry. Cut in 8 slices.

Number Of Ingredients 10

1 cup milk (warm)
3 tablespoons butter (softened)
1 tablespoon brown sugar
1 egg
1 teaspoon salt
1 teaspoon cinnamon (can add more if you like)
1 1/2 teaspoons dried yeast
3 cups bread flour (strong flour)
1/2 cup raisins (or sultanas)
1/2 cup glace cherries (halved)

Steps:

  • Put the ingredients into your bread machine in the order recommended by the manufacturer. (Mine is wet first then dry).
  • Add the raisins and cherries at the beep.
  • Choose the full cycle (3 hours) or you can use the sweet bread cycle which doesn't chop up the raisins so much. I prefer a light crust but you can make it as dark as you like.
  • Makes a 1 1/2 pound (750g) loaf.
  • This is great toasted for breakfast with butter.

2 cans (8 ounces each) pineapple chunks, drained
1 jar (10 ounces) red maraschino cherries, drained and halved
1 jar (10 ounces) green maraschino cherries, drained and halved
2 cups chopped walnuts

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition.
