- In a bowl, cream butter and sugar. Add eggs and banana; mix well. Combine flour and baking soda; gradually add to the creamed mixture. Cool for 10 minutes before removing from pans to wire racks.

Steps:
- Preheat the oven to 350 degrees F. Spray two 6-by-3-inch miniature loaf pans with cooking spray; set aside.
- Place the banana chips in a large zip-top plastic bag. Press out the air and seal. Using a rolling pin, roll over the chips until crushed.

- Heat cherries and brandy in saucepan over low heat just until mixture starts to simmer.
- Remove from heat; let stand 5 minutes for cherries to soften.
- Heat oven to 350 degrees.
- Coat 3 mini loaf pans (6x3x2") with nonstick cooking spray.
- Mix together flour, baking soda, baking powder, salt and allspice in large bowl.
- Beat together eggs and sugars in medium-sized bowl until well blended.
- Beat in buttermilk and oil.
- Make a well in center of flour mixture.
