85g caster sugar
2 eggs , beaten
200g bar white chocolate , roughly chopped
85g glacé cherries , halved

Steps:

  • Heat oven to 180C/160C fan/gas 4. Line a 20 x 30cm baking tray with baking parchment. In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Cook for 20 mins until golden brown and set, then cool in the tin before slicing into bars.

225g Milk Chocolate
55g Butter
110g Caster Sugar
1 Egg
110g Coconut
110g Cherries

Steps:

  • Start by greasing a 7x11inch tin. Melt chocolate over a pan of boiling water on the hob, stirring to stop it from burning. Pour into the tin and evenly spread. Leave in fridge to cool.
  • Preheat over to 150c fan. Cream fat and sugar together before mixing in the remaining ingredients (egg, coconut and fruit). Once the chocolate is set, pour over the coconut mixture and spread.
  • Bake for 20 minutes or until golden brown. Yum!!

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well.
