2 cups crushed ice, plus extra to serve
1/2 cup packed fresh mint leaves
1/3 cup fresh lime juice (about 3 limes)
1 cup citrus flavored rum
1 2/3 cups Lime Simple Syrup, recipe follows
Lime wedges and fresh cherries, for garnish
2 cups sugar
1 cup water
3 limes, zested

Steps:

  • Place the frozen cherries, crushed ice, mint leaves, lime juice, rum, and simple syrup in a blender. Blend until smooth.
  • Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.

11 oz. pitted sweet cherries
1 cup sweet red wine
1/4 - 1/2 cup sugar
1 shot cherry brandy
Fresh mint leaves
Several fresh sweet cherries
A good wedge of lime
1 shot cherry syrup
1 shot rum
Ice
Club soda

Steps:

  • To make the syrup: put the cherries, red wine, sugar and brandy in a small saucepan and bring to a boil. Reduce heat and let simmer for 10 - 15 minutes. Strain the juice from the cherries and reserve cooked cherries for another purpose. Let the syrup cool.
  • To make the mojito: in a tall glass, put several mint leaves, a few of the cooked cherries and a wedge of lime. Add a shot of cherry syrup and muddle together with a spoon to mix and release the flavors of the cherry, mint & lime. Fill the glass most of the way with ice, then add rum and top with club soda. Stir to mix.
  • Garnish with cherries, mint and/or fresh lime wedges. Taste and add syrup, rum or lime juice as desired. Enjoy!

1 1/4 cups freshly squeezed lime juice (about 9 limes)
3 pounds Bing cherries
18 ounces best-quality black cherry or plain vodka
1 bottle sparkling water (750 mL)

  • Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat; let cool completely. (Makes about 2 cups syrup.) Syrup can be refrigerated in an airtight container up to 1 month.
