130 g butter
150 g dark chocolate (70% cocoa solids)
55 g cherries
55 g roasted pecans
225 g caster sugar
55 g cocoa powder
75 g plain flour
¾ teaspoon baking powder
3 large free-range eggs
50 g milk or dark chocolate, optional

Steps:

  • Preheat the oven to 180ºC/gas 4. Line a 20cm square baking tin (or the equivalent) with greaseproof paper.
  • Melt the butter and dark chocolate in a bowl over a saucepan of simmering water (don't let the bowl touch the water).
  • Destone the cherries and roughly chop them along with the pecans. Stir into the melted chocolate, then take off the heat.
  • In another bowl, add the sugar, then sift in the cocoa powder, flour and baking powder. Add to the melted chocolate mixture and stir till well combined.
  • Beat the eggs and mix in. Roughly chop and stir through the milk or dark chocolate (if using).
  • Transfer the mixture to the tin, then bake in the oven for 15 to 20 minutes. You want them a little gooey in the middle.
  • Remove from the oven and cool in the tray, before cutting into squares.

I didn't see any recipes for cherry brownies that don't use pie filling or box mix, so I came up with my own. The cherries make the brownies very moist and add subtle fruit flavor. I bet you could use other canned or cooked fruits in this (berries, peaches, pears) with good effect. The base brownie recipe comes from "The Wise Encyclopedia of Cookery" ca. 1949 and it's still a super recipe.

3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 cup sugar
1/2 cup butter (can use shortening)
2 ounces unsweetened chocolate
1 teaspoon vanilla extract (almond would be good too)
2/3 cup dark cherries in light syrup, very well drained
1/3 cup semi-sweet chocolate chips
1/4 cup pecans, chopped (optional) or 1/4 cup slivered almonds (optional)

Steps:

  • Preheat oven to 350°F
  • Grease a 9" square pan.
  • Melt unsweetened chocolate and butter in the microwave.
  • Combine flour, baking powder, and salt in a large bowl. Whisk briefly to aerate (could sift, but I find it messier).
  • In a separate bowl, beat eggs and vanilla until fluffy. Add sugar in three additions, beating well between additions.
  • Add the butter/chocolate mixture to the egg/sugar mixture and mix thoroughly.
  • Add the wet mixture to the dry. Stir very gently just until combined.
  • Add cherries and chips and stir just until distributed.
  • Pour into prepared pan. Sprinkle top with nuts if desired.
  • Bake for 20-30 minutes. The edges should pull away from the pan slightly when they're done. Don't overbake.
  • Note: The original recipe says 20 minutes. Mine took 30. I can't tell if my oven's off or the cherries are causing the baking time to be longer.

Steps:

  • Make the filling: Combine the cherries, granulated sugar, lemon juice and a pinch of salt to a boil in a small saucepan over medium heat; bring to a boil. 2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1/2 cup chopped red or green maraschino cherries
2 teaspoons red or green maraschino cherry juice

Steps:

  • Heat oven to 350°F. Grease rectangular pan, 13x9x2 inches. In 1-quart saucepan, melt chocolate and butter over low heat, stirring frequently, until smooth; remove from heat. Cool 5 minutes. Meanwhile, in medium bowl, beat all Cherry Cream Cheese Filling ingredients with spoon until smooth, set aside.
  • In large bowl, beat chocolate mixture, 2 cups sugar, the vanilla and eggs with electric mixer on medium speed 1 minute, scraping bowl occasionally. Beat in flour and salt on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 1 minute. Stir in nuts.

2¼ cup milk chocolate chips (or semi-sweet)

  • Prepare brownies mix with the water, vegetable oil and eggs that it calls for on the box. (Every box can vary slightly) Bake as directed on the box. Let cool completely.
  • In a medium sized mixing bowl combine butter, powdered sugar, and 3 Tablespoons of juice from the maraschino cherries.
  • Beat until smooth and creamy.
  • Remove all of the cherries from the jar and chop.
  • Fold in the chopped cherries and chocolate chips into the batter.
  • Spread over the top of cooled brownies.
  • Place in the freezer for about 30 minutes to let the cherry layer set up well.
  • Melt chocolate chips and butter together in the microwave at 30 second intervals. Stir, and repeat for 30 more seconds. Continue to do this until chocolate is smooth and melted.
  • Spread over cherry-chocolate layer. Spread quickly because it will tend to set up when it hits the cold cherry layer.
  • Let set up until hardened (stick in the fridge if you need them set up faster) and then cut and serve.
