COCONUT CHERRY SURPRISE COOKIES
A cookie ball dipped in confectioners' powdered sugar icing, then topped in coconut. Each scrumptious cookie has a hidden maraschino cherry surprise. A great cookie for the holidays.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Place drained cherries on a paper towel.
- Grind slivered almonds in a food processor. Transfer to a bowl.
- Place coconut in the food processor; grind until finely chopped. Transfer 1 cup to a resealable plastic bag; add 3 drops of green food coloring, seal the bag, and shake. Pour into a bowl. Transfer remaining coconut to a separate resealable plastic bag; add 3 drops of red food coloring. Pour into a separate bowl.
- Beat butter and 1/2 cup sugar together in a large bowl with an electric mixer until light and fluffy. Beat in water and almond extract.
- Combine flour, ground almonds, oats, and salt in a bowl. Add flour mixture to butter mixture gradually; dough will be crumbly.
- Pack 1 tablespoon of dough around each cherry, forming a ball. Place 2 inches apart on the prepared baking sheet.
- Bake in the preheated oven until bottoms of cookies are lightly browned, 16 to 18 minutes. Cool on a wire rack.
- Line a baking sheet with waxed paper. Place 16 ounce package sugar in a bowl; mix in enough reserved cherry juice to reach a smooth dipping consistency. Dip the tops of the cooled cookies in the icing and then in the colored coconut. Place on waxed paper until icing is set, about 20 minutes.

- Mix oil and sugar thoroughly. Add eggs, one at a time, and beat until fluffy. Add vanilla.
- Sift flour and baking powder. Add to liquid and beat. Mix sugar and cinnamon for topping.
- Grease a 13 1/2 x 9 x 2 inch pan, and pour half the batter across the bottom. Sprinkle 1/2 the topping over batter. Spoon cherry pie filling over batter. Pour remaining batter over filling and sprinkle rest of sugar mixture on top.
- Bake at 325 degrees for 50 minutes.

- 1. mix cream cheese and half box of confectioners sugar,half & half milk and whipping cream and let stand
- 2. next melt butter and mix it and the other half of cofectioners sugar with graham crackers crumbs along 1 cup of pecans pour in pan and mash to cover whole baking dish bottom. heat for about 10 mins on 200 take out let cool. now pour the cream cheese mixture over your graham cracker crust
- 3. now pour cherry pie filling over this and then spread thawed cool whip over this and layer it with rest of the pecans,and now your finished.

- 1. Prepare the cherry tomatoes. Wash well and dry. Make a straight cut to remove the stem end of the tomato. Then scoop out the seeds and pulp with the smallest spoon available. (I used a 1/8 tsp.)
- 2. Turn all the tomatoes upside down, to let the juices drain. While the tomatoes are draining, prepare the filling.
- 3. Mix cream cheese and mayonnaise together, until smooth. Add the green onions, mix well. Set aside.
- 4. Drain the packing juice from the canned shrimp. Then soak the shrimp in ice water for 10 minutes. Pour off the water, and squeeze excess water from shrimp gently, and shred by hand.
- 5. Add the shredded shrimp to the cream cheese mixture. Mix well.
- 6. Generously fill each cherry tomato with the shrimp filling. Chill and serve! Enjoy!

The marshmallows started out on the bottom and ended up on the top forming a thin, brown,bubbly topping. And the cherries, which were on the top, ended up on the bottom. I haven't tried this with other pie fillings but I bet it would be equally as good.

- 1. Crust:Pour in greased large pan. Bake at 350 for 30 minutes. Cool. Don't worry when the crust falls.
- 2. Filling: 1/2 pint heavy whipping cream 1 (3 oz) Cream cheese softened at room temperature 1 c. sifted powdered sugar 1 t. Vanilla
