1 tablespoon unsalted butter
3 tablespoons olive oil
1 egg yolk
Pinch of salt
3 tablespoons tepid water

2 egg yolks
1 tablespoon chopped garlic
1 pint yellow cherry or pear tomatoes
1 pint red cherry or pear tomatoes
2 tablespoons olive oil
2 tablespoons rosemary leaves, chopped

Categories     Garlic     Tomato     Bake     Cocktail Party     Gourmet

Yield Makes about 30 hors d'oeuvres

Number Of Ingredients 6

a 6-ounce head of garlic, outer husk removed and 1/4 inch trimmed from the stem end
1 tablespoon olive oil
1 pint cherry tomatoes (about 30)
6 ounces cream cheese, softened
1 teaspoon fresh lemon juice, or to taste
fresh basil leaves, shredded, for garnish

Steps:

  • In a foil-lined baking dish drizzle the garlic with the oil, bake it, covered loosely with foil, in the middle of a preheated 325°F. oven for 1 1/4 hours, or until the pulp is very soft, and let it cool until it can be easily handled. Squeeze the pulp from the cloves into a bowl and let it cool. Mash the pulp until it is smooth (there should be about 1/4 cup purée.)
  • Using a serrated knife, on a work surface cut a thin slice from the bottom of each tomato so that it stands upright. Cut off a thin slice from each stem end and with a small melon-ball cutter scoop out the flesh and seeds carefully, forming tomato shells. Sprinkle the insides of the tomato shells with salt, invert the tomatoes on racks set over paper towels, and let them drain for 30 minutes.
  • In a bowl whisk together the cream cheese, the lemon juice, the garlic purée, and salt and pepper to taste until the filling is smooth. Using a pastry bag fitted with a small star tip, pipe the filling into the tomato shells. Garnish the filled shells with basil.

Herbed Goat Cheese in Cherry-Tomato Cups image

Provided by Martha Stewart

Categories     Appetizers

Yield Makes enough for 2 dozen

Number Of Ingredients 6

6 ounces goat cheese
2 teaspoons milk or heavy cream
1 tablespoon finely chopped fresh basil leaves
2 teaspoons finely chopped fresh chives
Coarse salt and freshly ground pepper
Cherry-Tomato Cups

Steps:

  • In a medium bowl, break up goat cheese using a fork; stir in milk. Add basil and chives; mix well. Season with salt and pepper. To serve, spoon 1 heaping teaspoon herbed goat cheese into each cherry tomato cup.

Tips:

  • Choose ripe cherry tomatoes: Look for tomatoes that are plump, firm, and have a deep red color. Avoid tomatoes that are bruised or have soft spots.
  • Use a sharp knife: A sharp knife will make it easier to cut the tomatoes and prevent them from splitting.
  • Hollow out the tomatoes carefully: Use a small spoon or a melon baller to hollow out the tomatoes. Be careful not to cut through the bottom of the tomatoes.
  • Season the goat cheese: Before filling the tomatoes, season the goat cheese with salt, pepper, and herbs. This will add flavor to the filling.
  • Stuff the tomatoes tightly: Fill the tomatoes tightly with the goat cheese mixture. This will prevent the filling from falling out when you bake the tomatoes.
  • Bake the tomatoes at a high temperature: Bake the tomatoes at a high temperature (400°F) for a short amount of time (10-15 minutes). This will help to cook the tomatoes and melt the goat cheese.
  • Serve the tomatoes warm or at room temperature: Cherry tomatoes filled with goat cheese can be served warm or at room temperature. They are a great appetizer or side dish.

Conclusion:

Cherry tomatoes filled with goat cheese are a delicious and easy-to-make appetizer or side dish. They are perfect for parties or potlucks and can be made ahead of time. With a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your guests.
