- To Make Sauce: Melt butter in a small saucepan over medium heat. Blend in salt, pepper and flour, then stir in the milk and Romano cheese. Simmer, stirring constantly, until thickened. Remove from heat, cover and set aside.
- To Make the Garlic Butter: Melt the butter in a small saucepan over medium heat. Blend in the garlic, rosemary, and salt. Cook, stirring constantly, until garlic is tender but not browned. Remove from heat, cover and set aside.
- To Make the Dough: Pour the warm water into a small bowl and stir in the yeast until dissolved. Allow to rest until yeast foams, about 5 minutes. Mix the vegetable oil, sugar, salt, rosemary, and garlic powder together in a mixing bowl. Stir in the yeast mixture, and gradually stir in the flour. Gather into a loose ball and knead until a smooth ball forms. Cover, and let rest 1/2 hour.
- Preheat oven to 400 degrees F (200 degrees C). Season the roasted chicken with rosemary, thyme, poultry seasoning, garlic powder and salt. Chop or shred and reserve.
- To Assemble the Pizza: Spread dough out on prepared pizza stone. Top with cooled garlic butter, covering entire crust. Next spread with Alfredo Sauce (if necessary, warm to spreading consistency), leaving crust edges. Top with chicken, turning to coat with sauce.
- Bake in preheated oven for 20 minutes, or until bottom crust is lightly browned. Remove from oven and let set for 2 to 3 minutes before cutting.

- Mix water, sugar, yeast, and 2 tablespoons of vegetable oil for several seconds on low speed in the work bowl of a large stand mixer fitted with a dough hook. Stop the mixer and add the flour and salt. Start the mixer on low speed and mix until the flour mixture is incorporated with the yeast mixture; turn speed to medium-low and machine-knead the dough until springy and smooth, 10 to 12 minutes. Sprinkle dough with flour occasionally if it sticks to the sides of the bowl.
- Form dough into a ball and place into an oiled bowl; turn the dough over in the bowl several times to oil the surface of the dough. Cover the dough with a towel, set into a warm place, and allow to rise until double, 30 minutes to 1 hour.
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes; drain on a paper towel-lined plate and allow to cool; chop and set aside.
- Melt butter in a saucepan over medium-low heat. Cook the garlic in the melted butter until fragrant, about 1 minute. Stir the cream into the butter mixture. Add the egg yolks and whisk with the butter mixture until smooth. Stir 1/2 cup of Parmesan cheese, the Romano cheese, and nutmeg into the mixture; season to taste with salt. Heat 1 tablespoon vegetable oil in a skillet over high heat. Sear the chicken breasts, seasoned sides first, in the hot oil until the spices turn almost black, about 1 minute per side; transfer to a baking sheet.
- Bake the chicken breasts in the preheated oven until no longer pink in the center and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 160 degrees F (70 degrees C), 5 to 10 minutes; set aside.
- Punch down pizza dough and roll out onto a floured work surface. Shape pizza crust on a large pizza stone or heavy baking sheet. Poke several holes in the crust with a fork to help it release steam.

- Preheat oven to 425°F.
- PIZZA DOUGH FIRST STEP: Dissolve sugar in warm water and sprinkle yeast over top; set aside for 10 minutes.
- ALFREDO SAUCE: Melt margarine (I prefer using Becel) in a saucepan and add crushed garlic. Stir in milk, starting with a little to make certain there are no lumps, and then add the remainder. Stir until it begins to thicken and then add the cayenne pepper, cumin, onion powder and salt and pepper (If available I also add a teaspoons of Watkins Jalapeno Dip powder). Remove from heat; set aside.
- PIZZA DOUGH SECOND STEP: Stir in salt and oil to yeast mixture. Stir in 3/4 cup of flour, and then stir in 1/2 cup of whole wheat flour and ground flax seed and work into a ball. If the dough feels sticky, add a small amount of white flour; set aside.
- TOPPINGS STEP ONE: Saute' vegetables and diced cooked chicken in 1 tsp canola oil.
- PIZZA DOUGH THIRD STEP: Spray pizza pan with a cooking spray (i.e. Pam) and coat with 1- 2 tsp oil. With palm of hand, work pizza dough to cover pizza pan and about 1/2-inch beyond the pan.
- TOPPINGS STEP TWO: Pour thickened sauce over dough, then sautéed vegetables and chicken. Add pineapple. Turn the outer edge of the pizza dough over the toppings (about 1/2 to 1 inch over). This will prevent the sauce from spilling into the oven and also will give the dough a stuffed effect. Mix the grated cheeses and put on top.
- Put in oven and immediately turn down the temperature to 400°F.
- Bake for 15 minutes, and then if you are able, remove pizza from pan and continue to cook for 10 minutes.

This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

- Roll dough out thin; put on lightly greased cookie sheet and prick holes all over to minimize bubbling.
- Prebake the pizza dough at 425°F for 5-7 minutes, remove from oven.

- In small skillet, heat oil while cutting up chicken breast into small pieces. Then, saute chicken in oil, and season with salt, minced garlic and dried basil. I came up with this pizza because I made a Buffalo style pizza that was too spicy for the kiddos. They loved the combo of Alfredo and Barbecue sauce!

Steps:
- In a small bowl mix chicken cubes with barbecue sauce and set aside.
- Spread Alfredo sauce on prepared pizza crust and top with 1/2 the mozzarella cheese. Top with chicken cubes, onions, mushrooms, black olives and cilantro. Finish with the rest of the cheese.
- Bake at 425 for about 15 minutes or until crust is brown.

CHICKEN BROCCOLI ALFREDO PIZZA
My teenage sons favorite pizza! I make this for him and his friends every weekend along with a meat lovers with bacon. This is always the first to go! It's so easy too, since I buy the dough and a precooked small chicken at the deli, and the alfredo sauce is just from a jar.

Steps:
- 1. place broccoli in a pot of boiling water to cook till tender. (10-15 min. ) preheat oven to 425 degrees.
- 2. while broccoli is cooking, flour your surface and roll out the dough one at a time to fit your pans. I use 2 medium cookie sheets since they fit side by side in the oven. stretch the dough over the pans to over hang.
- 3. Let the dough rest while you shred the mozzarella cheese. Divide the cheese in half.
- 4. roll the over hanging dough to make the crust. pour some alfredo sauce on the dough and spread with a spoon.
- 5. sprinkle mozzarella on top of alfredo sauce.
- 6. add the toppings: drain broccoli. arrange florets across pizza. cut or tear pieces of chicken and arrange across pizza. ( I have used left over chicken cutlets as well as baked chicken. I have even purchased an already cooked small chicken at the deli when I buy the pizza dough.
- 7. combine the melted butter with the garlic powder. use a brush to speed the mix on the crust. This makes a garlic bread stick crust.
- 8. sprinkle the toppings with a handful or two of parmesean cheese.
- 9. bake in 425 degree oven till the cheese bubbles and has spots of golden brown. Approx. 15 min. may be more. when done slide out of pan onto table and cut into 8 pieces each pizza. enjoy
