It's basically chicken pot pie made in a pressure cooker rather than an oven.

½ tablespoon olive oil
1 cup diced onion
½ cup diced carrot
½ cup diced celery
1 bay leaf
4 cups low-sodium chicken broth
1 pound boneless, skinless chicken thighs
1 pound bone-in chicken breasts, skin removed
½ teaspoon thyme
½ teaspoon dried marjoram
1 teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
salt and ground black pepper to taste
½ cup frozen petite peas
½ cup frozen cut green beans
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 tablespoons cold unsalted butter
1 tablespoon chopped fresh flat-leaf parsley
½ cup buttermilk

Steps:

  • Pour the olive oil into a multi-functional pressure cooker (such as an Instant Pot®) and select the Saute function. Cook onion, carrot, celery, and bay leaf until the vegetables are soft and the onion has turned translucent, about 5 minutes.
  • Add chicken broth, chicken thighs, chicken breasts, thyme, marjoram, salt, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.

3/4 cup milk
For the Stew:
2 tablespoons olive oil
1 onion (diced, about 3/4 cup)
3 cloves garlic (minced, about 1 tablespoon)
4 cups chicken stock (low sodium or unsalted)
1 teaspoon poultry seasoning
1 teaspoon kosher salt (or to taste)
1/4 teaspoon black pepper
3 stalks celery (diced, about 1 cup)
2 carrots (diced, about 1 cup)
1 1/2 pounds chicken breasts (cut into 1-inch cubes)
1 cup frozen peas (thawed)
3 tablespoons parsley (fresh, chopped, plus more for garnish)

Steps:

1 Tablespoon butter
1 small onion (diced)
1 cup celery (diced, (2 stalks))
1 cup carrots (diced, (about 2 or 3 carrots))
1 large russet potato (chopped)
3 large cloves of garlic (pressed or minced (about 1 Tbsp))
1½ pounds chicken breasts (cut in slightly larger than bite sized pieces)
4 cups chicken broth (divided)
1 teaspoon salt ((more or less to taste))
½ teaspoon ground black pepper
½ teaspoon poultry seasoning
½ teaspoon dried sage
½ teaspoon dried thyme
1 cup frozen peas ((or mixed vegetables))
½ cup heavy cream
6 jumbo canned buttermilk refrigerator biscuits ((a 16 ounce package contains 8, but you will only need 6 of them))

Steps:

  • Press the SAUTE button on the Instant Pot.
  • When the pot is hot, add the olive oil and the butter.
  • Add the onion and celery to the pot and saute for a few minutes. Add in the carrots and potatoes, stir.
  • Add in the garlic. Cook for 1 minute, scraping the bottom of the pot to get up any brown bits (deglaze).
  • Add chicken and 2 cups of chicken broth and continue to scrape the bottom of the pot again (to deglaze it to keep it from burning).
