Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place chicken into a roasting pan, and squeeze the juice from the grapefruit halves all over and inside the chicken. Drizzle chicken with olive oil, and sprinkle with seasoned salt. Cover with aluminum foil.
- Bake in the preheated oven, covered, for 45 minutes; remove foil, and bake until meat is no longer pink at the bone and the juices run clear, about 15 more minutes. Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

Tips:
- Choose fresh and ripe grapefruit: The quality of your grapefruit will greatly impact the flavor of your stir-fry. Look for grapefruit that are heavy for their size, have smooth skin, and are free of blemishes.
- Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your stir-fry. Some good options include broccoli, carrots, bell peppers, and snap peas.
- Don't overcrowd the pan: When stir-frying, it's important to not overcrowd the pan. This will prevent the vegetables from cooking evenly and will make it more difficult to get a good sear on the chicken.
- Use a high-quality oil: A good quality oil will help to prevent your stir-fry from sticking to the pan and will also add flavor. Some good options include olive oil, grapeseed oil, and canola oil.
- Cook the chicken and vegetables in batches if necessary: If you're using a lot of chicken and vegetables, you may need to cook them in batches. This will ensure that everything cooks evenly.
Conclusion:
Chicken and fresh grapefruit stir-fry is a healthy and delicious meal that's perfect for a quick and easy weeknight dinner. By following these tips, you can make sure your stir-fry turns out perfect every time. So next time you're looking for a healthy and flavorful meal, give chicken and fresh grapefruit stir-fry a try!
