1 lb. rigatoni pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz. baby Portabella mushrooms, sliced
1 shallot, minced
1 tablespoon garlic, minced
1/4 cup Parmesan cheese, grated
1 cup chicken broth
1 cup heavy cream
1/2 teaspoon dried thyme
1/4 teaspoon sage
1/4 teaspoon nutmeg
Salt and pepper to taste
Fresh parsley to garnish, chopped

Steps:

  • Bring a pot of salted water to boil and cook the rigatoni until al dente. Reserve 1/4 cup of pasta water then drain and set aside.

2 Tbsp extra-virgin olive oil
2 Tbsp butter
1 lb(s) crimini or button mushrooms, sliced
3 - 4 cloves garlic, finely chopped
2 shallots, finely chopped
A few sprigs fresh sage and thyme, finely chopped

2 Tbsp tomato paste
⅓ cup marsala or dry sherry
2 cups tomato passata or purée
1 cup chicken stock
½ cup heavy cream
2 cups poached chicken, in bite - size pieces
1 lb(s) rigatoni

2 chicken, marylands
2 tablespoons olive oil
1 cup thickened cream
2 garlic cloves, peeled
2 sprigs fresh thyme
150 g small broccoli florets
300 g rigatoni pasta
200 g sliced mushrooms
1/2 small brown onion, finely chopped
1/2 cup shaved parmesan cheese

Steps:

  • Preheat oven to 180 degrees celcius. Season Chicken with salt and pepper and place on an oven tray lined with baking paper. Drizzle with 1 tablespoon olive oil and roast for 50-55 minutes or until cooked through.
  • Remove from oven and stand for 15 minutes. Once cooled, discard skin, pull meat off bone and tear into bite size pieces.
  • Place cream, garlic and thyme in a small saucepan over medium heat. Bring to a simmer then turn off heat to let flavours infuse.
