CHICKEN PAPRIKA
My whole family, full of picky eaters, loves this dish, and it's great for freezing and reheating on a cold day or for an easy dinner on cold nights. This dish comes out as more like a stew than a meat with a sauce. Serve over egg noodles or hot cooked rice. Goes great with fresh, crusty pumpernickel bread for hearty winter meal. Easy to make and can be kept on low heat on the stove for lengthy parties.

- Toss carrots and sweet potatoes with 1 tablespoon oil; season with salt. Scatter around chicken; roast 20 minutes.
- Flip carrots and sweet potatoes and add garlic, tossed with 1 tablespoon oil, to pan. Roast until an instant-read thermometer inserted into thickest part of a thigh reads 165 degrees F, 25 to 35 minutes. Tent chicken with foil to prevent overbrowning, if needed. Let rest 10 minutes before carving and serving. Return carrots and sweet potatoes to oven and roast until golden, 10 minutes. Brush with pan juices before serving.
Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your pilaf taste its best. Look for chicken that is free-range and organic, and use a good quality paprika.
- Don't overcrowd the pan: When cooking the chicken and vegetables, make sure to not overcrowd the pan. This will prevent them from cooking evenly.
- Cook the rice in chicken broth: Using chicken broth instead of water will add a lot of flavor to the rice.
- Let the pilaf rest before serving: After cooking, let the pilaf rest for a few minutes before serving. This will allow the flavors to meld together.
Conclusion:
Chicken and paprika pilaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its tender chicken, flavorful vegetables, and fluffy rice, this pilaf is sure to be a hit with the whole family.
