Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best for this recipe. If you're using chicken breasts, be sure to pound them thin so they cook evenly.
  • Use a variety of peppers: Bell peppers, poblano peppers, and Anaheim peppers are all good choices. You can also use a mix of different colors of peppers for a more visually appealing dish.
  • Don't overcrowd the pan: When searing the chicken and peppers, be sure to work in batches so that the pan is not overcrowded. This will help to prevent the chicken and peppers from steaming instead of searing.
  • Use a good quality balsamic vinegar: The balsamic vinegar is a key ingredient in this recipe, so be sure to use a good quality vinegar that has a rich, complex flavor.
  • Reduce the balsamic vinegar: Reducing the balsamic vinegar will help to concentrate its flavor and make it even more delicious. Be sure to reduce the vinegar until it is thick and syrupy.
