  • When cool enough to handle, peel peppers, discarding stems and seeds, and cut lengthwise into 1 1/2-inch-wide strips.
  • While peppers are standing, pulse almonds, garlic, and jalapeño in a food processor until finely chopped. Add cilantro, mayonnaise, lime juice, sour cream, and salt and blend to a paste.

Tips:

  • Choose the right chicken: For the best flavor and texture, use boneless, skinless chicken breasts or thighs. If you are using chicken breasts, pound them to an even thickness so they cook evenly.
  • Use ripe, flavorful peppers: The roasted peppers are a key ingredient in these sandwiches, so make sure to use ripe, flavorful peppers. Bell peppers of any color will work well, but roasted red peppers have a particularly sweet and smoky flavor.
  • Make the cilantro-almond relish ahead of time: This relish is a great way to add a bright, fresh flavor to the sandwiches. It can be made up to 2 days ahead of time and stored in the refrigerator.
  • Toast the bread: Toasting the bread adds a nice crunch to the sandwiches and helps to hold them together. You can toast the bread in a toaster or on a grill pan.
  • Assemble the sandwiches: Once all of the components are ready, it's time to assemble the sandwiches. Start by spreading some of the cilantro-almond relish on one slice of toasted bread. Top with chicken, roasted peppers, cheese, and the other slice of toasted bread.
