2 pounds small red potatoes, quartered
3 tablespoons water
2 pounds boneless skinless chicken breasts
1 medium onion, sliced
2 medium carrots, cut into 2-inch pieces
2 celery ribs, cut into 2-inch pieces
3 garlic cloves, minced
2 bay leaves
1-1/2 teaspoons pepper, divided
2-1/2 cups chicken broth
1/2 cup white wine or additional chicken broth
4 ounces cream cheese, softened
3/4 teaspoon salt, divided
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 cup 2% milk
Minced chives, optional

Steps:

  • In a large microwave-safe bowl, combine potatoes and water. Microwave, covered, on high for 10-12 minutes or just until tender. Cool slightly; drain., Transfer potatoes to a 5-qt. slow cooker. Add chicken, vegetables, garlic, bay leaves and 1 teaspoon pepper. Pour broth and wine over chicken and vegetables. Cook, covered, on low 3-4 hours or until a thermometer reads 165° and potatoes are tender. Remove chicken from slow cooker; tent with foil., Strain cooking juices, reserving potatoes and cooking juices; discard remaining vegetables and bay leaves. In a large bowl, mash potatoes with cream cheese, 1/4 teaspoon salt, 1/4 teaspoon pepper and enough cooking juices to reach desired consistency; keep warm., In a small saucepan, melt butter over medium heat. Stir in flour until blended; cook and stir 1-2 minutes. Gradually whisk in 1 cup cooking juices, milk and remaining salt and pepper. 1 1/2 pounds Yukon gold potatoes, cut into 1-inch pieces
4 bone-in, skin-on chicken breasts (6 to 8 ounces each)
Coarse salt and ground pepper
2 teaspoons fresh thyme leaves
4 teaspoons olive oil
4 large shallots, quartered
1 tablespoon grated lemon zest
2 garlic cloves, thinly sliced
1 pound spinach, trimmed and washed
Fresh lemon juice

  • Preheat oven to 450 degrees. In a medium saucepan, bring potatoes to a boil in salted water and cook until tender when pierced with a knife, 15 minutes.
  • Meanwhile, season chicken with salt, pepper, and thyme. In a large ovenproof skillet, heat 1 teaspoon olive oil over medium-high. Cook chicken, skin side down, until golden and crisp, 5 minutes. 3 cups frozen mixed vegetables

12 fresh basil leaves, chiffonaded
1/4 cup fresh parsley, chopped
1 cup ricotta cheese
1/2 cup gorgonzola
6 slices pancetta, chopped
salt & freshly ground black pepper
2 large eggs
1 cup dry white wine
1 cup homemade chicken stock
2 tablespoons Dijon mustard
1 lemon, juice and zest of
salt & freshly ground black pepper
chopped fresh parsley leaves, for garnish
1 lemon, sliced,for garnish
4 (8 ounce) boneless skinless chicken breast halves
kosher salt
fresh ground black pepper
3 -4 tablespoons vegetable oil
2 lbs red potatoes, halved if large
3 tablespoons butter
1/2 cup milk
salt and pepper

  • preheat oven to 300 degrees F

1 ½ pounds potatoes, peeled and diced

¼ cup milk
½ teaspoon Italian seasoning
1 ½ tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
