CHICKEN ARIZONA

Chicken Arizona image

A workweek's worth of dinner with simple changes (chicken chili and smothered burritos). These meals can also be made with whatever is on hand or regional brands of Hispanic foods, the most important thing is to mix and match. If your family doesn't care for spicy foods, tone down the peppers but if they do you could go wild!

  • Choose the Right Chicken: For this recipe, it's best to use boneless, skinless chicken breasts or thighs. If you're using chicken breasts, pound them to an even thickness so they cook evenly.
  • Use a Good Quality Salsa: The salsa is a key ingredient in this recipe, so make sure you use a good quality one. Look for a salsa that has a good balance of flavors and is not too spicy.
