CHICKEN AND ASPARAGUS AU GRATIN
The recipe is from a Betty Crocker cookbook, 1954, and I use it frequently. I've tried it with ham instead of chicken and other green vegetables but it was not good. Use fresh asparagus--I steam pieces for about 2 min. I always make a double batch and freeze one. For color, I like to serve with Harvard beets, or in summer with sliced tomatoes.

Tips:
- Choose the right asparagus. Look for asparagus that is bright green and has tightly closed tips. Avoid asparagus that is limp or has woody stems.
- Blanch the asparagus. Blanching the asparagus helps to preserve its color and crispness. To blanch the asparagus, bring a large pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until the asparagus is bright green and tender. Immediately remove the asparagus from the boiling water and place it in a bowl of ice water to stop the cooking process.
- Use high-quality ingredients. The quality of your ingredients will greatly affect the flavor of your dish. Use the best quality chicken, asparagus, and cheese that you can find.
- Don't overcook the chicken. Overcooked chicken is dry and tough. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
- Serve the dish immediately. Chicken asparagus with melted Gruyère is best served immediately after it is made. The asparagus will start to lose its crispness if it sits for too long.
Conclusion:
Chicken asparagus with melted Gruyère is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of tender chicken, crisp asparagus, and melted Gruyère cheese is simply irresistible. This dish is sure to please everyone at your table.
