HOT AND CRUNCHY CHICKEN WITH MANGO CHUTNEY SAUCE
My best friend served this the first time they had us over for dinner. It's wonderful. Trout or turkey breast slices can be substituted for the chicken breasts. If there's leftover sauce, it's excellent on sandwiches.

Steps:
- For the chicken tenders: Preheat the oven to 400 degrees F. Add a wire rack to a baking sheet and spray with cooking spray.
- In 3 separate shallow bowls, create a 3-step breading process. In the first bowl, add the coconut flour. In the second bowl, whisk the eggs, milk and a pinch of salt to combine. In the last bowl, add the panko, coconut, 1 teaspoon salt and 1/2 teaspoon pepper and stir to combine.
- Pat the chicken dry and add it to the coconut flour, shaking off any excess. Then dip it in the egg mixture, making sure to coat the chicken entirely. Last, lay the chicken in the panko mixture, turn it over and press into the breading to coat evenly. Place on the prepared rack on the baking sheet and spray with cooking spray. Bake until golden brown, 18 to 20 minutes. If the chicken is light in color, place under the broiler for the last 2 minutes of cooking time.
- For the dipping sauce: Stir together the chutney, yogurt and jalapeno in a medium bowl.
- Serve the chicken with the dipping sauce.
Tips:
- Choose ripe mangoes for the chutney. This will give it a sweeter and more flavorful taste.
- If you don't have any mango chutney, you can substitute it with another sweet and tangy condiment, such as pineapple jam or orange marmalade.
- Feel free to adjust the amount of chili sauce in the recipe to your own taste. If you like it spicy, add more chili sauce. If you prefer a milder flavor, use less.
- Be sure to preheat your oven before baking the chicken. This will help to ensure that the chicken cooks evenly.
- Keep an eye on the chicken while it is baking. If you notice that the sauce is starting to burn, reduce the heat or cover the chicken with foil.
Conclusion:
This chicken dish is a delicious and easy way to enjoy a sweet and tangy meal. The combination of ketchup, sweet chili sauce, and mango chutney creates a flavorful sauce that pairs perfectly with the tender chicken. Serve this dish with rice or noodles for a complete meal.
